I'm looking for an easy, very easy to make diabetic peanut butter fudge recipe. I used to have one that was a no cook recipe but I can't find it. Does anyone have one?

Storing Potato Flakes

I was wondering if anyone knew how long potato flakes would be good for. I have a bag of flakes in the cupboard and I think they are 2 years old. I could make instant potaoes for the dogs if need be, I suppose, to use them up. Any suggestions for using them besides thickening stews and soups?

Easy Swiss Steak

I am looking for a recipe that I have used many times and now I can't find it. It is for a no browning, easy, oven-baked swiss steak. I know part of the recipe includes ketchup combined with worcestershire sauce which you pour over the pieces of round steak in a baking pan. You can add chopped celery, onions and mushrooms. I believe that the recipe also calls for a little red cooking wine. I love this recipe as it's so easy to make and tastes like you slaved for hours. Does this ring a bell with anybody?

Creamy Potato Soup

Ingredients

  • 12 potatoes, peeled and cubed
  • Milk
  • 1 Large onion, diced
  • 1 can cream of chicken
  • 1 can cream of celery
  • 1/4 Velveeta cheese block
  • Chicken base (paste) I don't measure but use A LOT

Directions

Boil 6 potatoes till they are done, put in large pot. Boil the other 6 potatoes and onions until they are a little over done and really soft. When you boil the potatoes, add only enough water that will cover them and cook the second batch of potatoes with the chicken base mixed in the water. Add all ingredients to the large pot and then add enough milk to get the consistency you would like.

If you have ever had Cracker Barrel's potato soup, you will love this!

Chocolate Cherry Almond Torte

Ingredients

  • 4 oz. unsweetened chocolate
  • 1/4 cup water
  • 1/2 cup sweet butter, cut in pieces
  • 1/2 cup sugar
  • 3 large or 4 small eggs, separated
  • 1/2 cup unblanched almonds, ground
  • 1/3 cup flour
  • Sour cherry jam
  • Chocolate icing, recipe follows

Directions

Preheat oven to 350 degrees F. Melt chocolate in water over low heat, stirring constantly. Remove from heat. Stir in butter until completely melted. Blend in sugar. Cool. Beat in egg yolks, one at a time. Blend in nuts. Stir in flour and blend well. Fold in stiffly beaten egg whites. Grease and flour two 8 inch layer cake pans. Divide batter evenly between the layers. Bake approximately 20 minutes or until cake tests done. Remove from pans. When cakes are cool, spread a thin layer of jam over the top of the bottom layer. Stack layers. Frost top and sides thickly with Chocolate Icing.

Chocolate Icing

Ingredients

Directions

  • 1 1/2 cups sugar
  • 1 1/2 cups hot water
  • 2 oz. unsweetened chocolate
  • 1/3 cup cornstarch
  • 1/4 cup cold water

Combine sugar, hot water and chocolate in heavy saucepan. Over medium heat, bring to boiling. Lower heat and cook 5 minutes, stirring constantly. Mix cornstarch and cold water to form a smooth paste. Stir into chocolate mixture. Cook 3 to 4 minutes, stirring constantly. Remove from heat. Stir in extract. Beat until cool enough to spread. Makes about 2 cups.

Elves Cookies

Ingredients

  • 1/2 cup butter or margarine, melted
  • 1 cup graham cracker crumbs
  • 1 cup coconut
  • 1 package chocolate chips
  • 1 can sweetened condensed milk
  • 1 package butterscotch chips
  • 1 cup chopped pecans

Directions

Grease 9x13 inch pan. Make layers using the ingredients in the order given. Bake in 325 degree F oven for 25 minutes. Let cool and cut into blocks.

Yummy Pudding N Stuff Cake

Ingredients

  • 1 package Jiffy yellow cake mix
  • 1 package (3.4 oz.) vanilla instant pudding
  • 1 can (20 oz.) crushed pineapple, thoroughly drained
  • 1 - 8 oz. package cream cheese
  • 1/2 cups chopped walnuts
  • 1 large container of Cool Whip
  • Maraschino cherries (cut in half and drained on paper towel

Directions

Mix Jiffy cake mix according to package directions and pour into a 13x9 inch pan. Batter will be very thin. (really a shell) Bake 20-25 min. at temperature on package. Remove from oven and cool. Mix the instant pudding according to package directions using a little less milk than the directions call for. Blend pudding and cream cheese together until smooth and after cake has cooled off, spread over top of cake shell. Then spread the crushed pineapple over all, spreading it evenly. Spread the Cool Whip over the top. Sprinkle with chopped nuts and dot with cherries. Serves 8-10

Enchilada Casserole

Ingredients

  • 12 flour tortillas
  • 2 lbs. ground beef, browned with chopped onion to taste
  • 1 lb. grated colby of Cheddar cheese
  • 1 pint sour cream
  • 1 can diced mild green chilies
  • sliced ripe olives, to taste

Directions

Roll hamburger and grated cheese into tortillas, reserving about 1/2 cup of the cheese. Place in greased 9x13 inch pan. Mix soup, sour cream, chilies. Spread mixture over stuffed tortillas. Sprinkle with remaining cheese and top with olives. Cover with foil and bake 1 hour at 325 degrees F.

Chocolate Chip Pizza

Ingredients

  • 1 cup sifted flour
  • 1/2 tsp. baking powder
  • 1/8 tsp. soda
  • 1/2 tsp. salt
  • 1/3 cup butter or margarine, melted
  • 1 cup firmly packed brown sugar
  • 1 egg
  • 1 Tbsp. hot water
  • 1 1/4 tsp. vanilla
  • 1/2 cup chopped nuts
  • 1 package semi-sweet chocolate chips
  • 1 cup mini marshmallows

Directions

Sift together flour, baking powder, soda and salt. Set aside. Combine melted butter and brown sugar in mixing bowl. Beat with electric mixer at medium speed until blended. Add egg, hot water and vanilla. Mix well. Add dry ingredients 1/3 at a time, mixing well each time. Add nuts.

Spread dough in 2 greased 9 inch pie plates. Sprinkle each pie with half the chocolate chips and half the marshmallows. Bake at 350 degrees F for 20 minutes. Cool in pans on rack. Cut each pie into 8 pieces. Makes 16 wedges.
