Green Tomato Mincemeat

Ingredients
  • 4 Qts. ground green tomatoes
  • 4 Qts. ground tart apples
  • 2 lbs. ground raisins
  • 1 cup vinegar
  • 2 Tbsp. cinnamon
  • 1/2 cup molasses
  • 2 Tbsp. salt
  • 1 tsp. ground cloves
  • 1 tsp. allspice
  • 2 Tbsp. brown sugar, packed
  • Boiling water

Directions

Place ground tomatoes in a large kettle; cove with boiling water. Boil for 5 minutes. Drain; and repeat. Drain again. Add all remaining ingredients and bring to a boil. Simmer till thick, stirring occasionally. Put in jars and seal.. Pressure canner for 10 minute at 10 lbs. of pressure. Makes: 8 Quarts.

(great way to use up those tomatoes still left in the garden when frost time rolls around and ready for holiday baking!)
