Frying Chicken Livers

Can anyone tell me how to fry chicken livers without having grease pop all over. My husband and oldest son love them but I hate fixing them because I get splattered on every time I fry them. I tried boiling first but that didn't work. Help!

Provolone Chicken

Ingredients

  • 6 to 8 chicken breast halves, skinned and boned
  • 1 slice Provolone cheese per piece of chicken
  • 1 can cream of chicken soup
  • 1/3 cup milk
  • 1 (4 oz.) can chopped green chilies
  • 2 cups Pepperridge Farm Cornbread dressing mix
  • 1/2 cup melted butter, or margarine

Directions

Preheat oven to 350 degrees F. Butter a large flat casserole dish (13x9-inch or larger) Place chicken pieces in prepared pan; top each piece with a slice of Provolone cheese. In a medium size bowl; stir together the soup and milk; stir in green chilies until well mixed and then spoon evenly over the cheese. In a separate bowl, mix melted butter and dressing mix, then sprinkle over the top of the soup mixture. Bake uncovered for 50 to 60 minutes.

Double Quick Dinner Rolls

Dissolve 1 package dry yeast in 3/4 cup of warm water. Add 1/4 cup sugar and 1 tsp. salt. Sift 2 1/4 cups flour and add half of it to the yeast mixture. Add 1 egg and 1/4 cup soft shortening to the mixture. Add the other half of flour.

Let rise in bowl 40-50 minutes. Stir down. Drop into large muffin tins. Bake at 425 degrees F for 10 minutes.

Elegant Tuna Shepherd's Pie

Ingredients

  • 2 cans chunk tuna, drained
  • 1 1/2 cups frozen peas (thawed)
  • 1 1/2 cups cooked, sliced carrots
  • 1 can mushroom pieces, drained
  • 1 can cream of mushroom soup
  • 1/4 cup milk
  • 1/2 cup finely chopped onion
  • 4 cups seasoned mashed potatoes

Directions

Combine the tuna, peas, carrots, mushroom pieces, soup and milk and mix well. Beat the onion into the mashed potatoes. Arrange half of the potato mixture in a greased 2 qt. casserole and top with the tuna mixture. Spoon the rest of the potatoes around the edge of the casserole, and bake in a 350 degree F oven for about 45 minutes.

Raspberry Iced Tea

Ingredients

  • 4 qt. water
  • 1 1/2 cups sugar
  • 1 package frozen unsweetened raspberries (12 oz.)
  • 10 individual tea bags
  • 1/4 cup lemon juice

Directions

In a Dutch oven, bring water to a boil. Remove from the heat; stir in sugar until dissolved. Add raspberries, tea bags and lemon juice. Cover and steep for 3 minutes. Strain; discard berries and tea bags. Cool. Serve over ice.

Frugal Oatmeal

I was buying the storebrand instant oatmeal, or Quaker when a coupon was available, but now our family is cutting back on sugar. I buy the largest container of store brand Quick Oats, add my own cinnamon or chopped up apple, walnuts, etc, whatever you like to add. I put all the ingredients in a microwave safe bowl add water and cook, put some low fat milk on it and enjoy. If you don't have time for breakfast at home, put the ingredients in a container and add water at work, then microwave. You just may have to do without the milk unless there is a small refrigerator at the office.

Turkey Supreme

Ingredients

  • 3 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • 1 1/2 cups milk
  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 2 1/2 cups diced cooked turkey
  • 2 cups cooked rice
  • 1 can peas, drained
  • 1 tsp. curry powder
  • 1/8 tsp. pepper

Directions

Melt butter or margarine, add flour and salt. Next add milk and stir constantly until thickened. Combine with the rest of the ingredients and put in a 2 qt. buttered casserole. Bake in 350 degrees F oven for 30-45 minutes.

Broccoli and Rice Casserole

Ingredients

  • 16 or 20 oz. frozen broccoli
  • 1 stick or margarine or butter, melted
  • 4 oz. can of mushrooms, drained
  • 1 can cream of chicken soup
  • 1 soup can of milk
  • 1 soup can of Minute Rice
  • Velveeta cheese cubes to taste

Directions

Mix all together, put in a casserole dish and bake for 30 minutes at 350 degrees F.

Double Delicious Cookie Bars

Ingredients

  • 1/2 cup margarine or butter
  • 1 1/2 cups graham cracker crumbs
  • 1 (14 oz.) Can Eagle Brand Condensed Milk
  • 1 (12 oz.) package Semi-sweet chocolate chips
  • 1 cup peanut butter chips

Directions

Preheat oven to 350 degrees F (325 degrees F for glass dish). In 13x9 inch baking pan, melt margarine in oven. Sprinkle crumbs evenly over margarine, pour Eagle Brand evenly over crumbs. Top with chips; press down firmly. Bake 25 - 30 minutes or until lightly browned. Cool. Cut into bars. Store loosely covered at room temperature.

Spiced Pineapple Chunks

Ingredients

  • 1 can pineapple chunks (1lb. size)
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 cup cider vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 6 whole cloves
  • 1 cinnamon stick

Directions

Drain pineapple chunks and to the syrup add remaining ingredients. Boil 15 minutes. Strain. Add pineapple and simmer 30 minutes.
