Macaroni Salad

Ingredients

  • 2 cups macaroni
  • 1 cup sour cream
  • 1 cup salad dressing
  • 3/4 cup sugar
  • 1 tsp. garlic salt
  • 2 tsp. celery seed
  • 1/2 cup diced celery
  • 1 tsp. mustard

Directions

Cook macaroni with 2 tsp. salt until soft, then rinse in cold water. Drain well. When cooled, add rest of ingredients. Does not get watery.

Macaroni Salad II

Ingredients

  • 7 or 8 oz. macaroni, cooked, rinsed, and drained
  • 1/2 cup chopped celery
  • 3 eggs, cooked and diced
  • 2 Tbsp. sugar
  • 1/2 tsp. celery seed
  • 1 cup mayonnaise
  • 1 small can drained crushed pineapple
  • 2 Tbsp. vinegar
  • 1/2 cup Pet milk

Directions

Combine macaroni, celery, and eggs in a bowl. Mix together sugar, vinegar, celery seed, Pet milk, and mayonnaise in a small bowl. Pour dressing mixture over the macaroni and ad the crushed pineapple, mixing well. Refrigerate.

Macaroni Salad III

Ingredients

  • 3 cups cooked macaroni
  • 1 diced green pepper
  • 6 sweet pickles, chopped
  • 1 diced onion
  • 4-5 chopped, hard-cooked eggs
  • 1/2 cup chopped pimento
  • 1 tsp. salt
  • dash pepper
  • enough mayonnaise to moisten

Directions

Mix together and refrigerate.

Macaroni Salad IV

Ingredients

  • 1 package small macaroni
  • 1 can peas
  • 1/2 cup sliced sweet pickles
  • 1/4 cup chopped onions
  • 1/2 cup chopped celery
  • 4 hard-cooked eggs, cubed
  • 1 can Spam, cubed
  • 1/2 cup cubed cheddar cheese
  • 1 small jar pimento
Dressing for Macaroni Salad:
  • 1 1/2 cups Miracle Whip
  • 1/2 small can Carnation milk
  • 1/4 cup sweet pickle juice
  • 2 Tbsp. sugar
  • salt, to taste

Directions

Cook macaroni and drain. (Don't overcook.) Drain peas. Add all the main ingredients above. Mix the dressing ingredients and pour dressing over mixture. Chill in refrigerator.

My husband signed me up for cold macaroni salad for his work's Thanksgiving luncheon. I make very boring cold macaroni salad - so it hasn't been made by me in years. Normally, I'd make it like potato salad: celery seed, diced onion, cooked macaroni al dente, Miracle Whip, a couple of hard boiled eggs.

Any suggestions?

My macaroni salad eats like a meal lol I dont measure but Ill try here. Regular small box of macaroni or spirals. 4-5 celery stalks sliced thin. medium onion chopped (we like it med size) 4-6 boiled eggs chopped (reserve few slices for top) 1/2 sm jar sweet pickles sliced 1/2 sm jar dill pickles sliced (if desired --I do few handfulls of olives sliced shaved radishs to make it pretty shaved carrotes to make it pretty Shredded cheese if desired (but if theres leftover cheese makes it mushy) I dont add it Dressing Salad dressing .. (I dont use miracle whip unless its on sale theres really no difference in taste. I dont measure I just mix by looks and taste.maby 1/2 jar.. ??? celery seed according to amt of salad dressing used 1/4 to 1/2 cup sugar 1/4 to 1/2 cup vinegar (or lemon juice I usualy use lemon juice) sugar.. added by tsp at a time according to taste. about......1/4 to 1/2 cup sour creme (gives it a lighter taste) Mixing.. put macaroni in large bowl.. layer ingredients on top.. mix dressing and pur on top.. spread around.. then start on one side turning dressing over a couple times going around the bowl.. when you get back to where you started its mixed and this prevents overmixing and soggy mushy salad.. actualy I make TUNA salad not just macaroni salad and to the top mixture I would layer in 2-3 cans drained tuna... I told you it eats like a meal and there WONT be any left!!! :) If I take this somwhere everyone wants the recipe and as you can see I dont measure people growl at me for that loll (11/08/2006)

Prepare a couple of boxes of Kraft Macaroni and cheese, cool and add all of the rest of the stuff you usually do, chop up a tomato and maybe some ripe olives. That would really jazz up your old recipe pretty much!! The cheese helps lots. I also make Kraft Macaroni and cheese and add a batch of homemade tuna salad...the kind with celery and egg. To the Mayo or Miracle whip I usually add a tablespoon or two of mustard (yellow or spicy brown), as well as a tablespoon or two of pickle relish, finely diced celery and onion (to your taste). For those who like spice, I've even added a touch of salsa, finely chopped a few picked jalapenos into it and a few times even added some chopped cooked shrimp (haven't done that when I've added the japalenos or salsa, though it might be interesting to try). Then I hard boil some eggs and slice them on top for garnish. The other thing I like to do with macaroni is use shells and chop raw veggies like carrots, onions, tomatoes, peppers and cucumbers and add them to the macaroni. You can put in sliced black or green olives. I add pepperoni slices and cubed or shreded cheddar cheese and season with italian salad dressing. (11/08/2006)

Is there a difference between Macaroni Salad and Pasta Salad? If not, then I'd suggest replacing the macaroni with a more colorful noodle that you should find at your local grocer. If nothing else, it adds a lot of color! (11/08/2006)

Do it with an Italian twist-use rotina or other fancy pasta shape, multi-colored preferable and rather than mayo use Italian salad dressing. Add red onion, diced pepperoni or salami, olives, pepperoncini, and the like. (11/08/2006)

The taste is so good and i wondered for years how they made it orange looking. Then i tried what you posted and i twas excatly that. It was dead on and the taste was the same. Never knew Mac Salad had so many devoted fans! My recipe is the same, except the following. Sorry, I don't measure too much either! 1)for cheese, I find Velveeta works great, but you have to separate the cubes by hand after you cut them. 2)substitute olive oil for some of the mayo. 3) use about 1/4 to 1/2 tsp of garlic powder, oregano, basil, dry mustard (and also wet mustard) 4) eggs are hard boiled, whites cubed and added, yolks mashed with a bit of mayo and blended in. 5) still trying to match the delicious macaroni salad you buy at Gershon's delicatessen in Schenectady New York. My mom's macaroni salad

I have tasted lots of different mac salads, but my mother (now deceased) made the best! She used large elbow macaroni, Miracle Whip, hard boiled eggs and chopped sweet gherkins. She usually made some with onions and some without because dad liked onion, but she didn't. I loved both versions. I know it sounds simple, but I make it all the time and everyone eats it up! Macaroni Salad I
  • 2 pkgs. spiral macaroni (cooked)
  • 2 large carrots (diced)
  • 1/2 onion (diced)
  • 1 cup celery (diced)
  • 1 cup cheddar cheese (shredded)
  • 1 cup peas
  • 2 cup mayonnaise
  • 1 cup sugar
  • 1 can sweetened condensed milk
  • 1/3 cup vinegar

Mix first 6 ingredients together. In a separate bowl; mix remaining ingredients and pour over macaroni mixture; mix well and chill. This will keep in refrigerator for several days.

  • 2 Hard Boiled Eggs,Chopped
  • 1-2 Tsp Mustard
  • 1 C Miracle Whip

KAREN'S Macaroni Meal salad

  • 1 box macaroni
  • 1 cup miracle whip
  • 1/2 cup chopped onions
  • 1/2 cup chopped dill pickles
  • 2 hard boiled eggs chopped
  • salt to taste
  • 1 - 1 1/2 cups diced tomatoes
  • 2 drained cans of tuna
  • 16 0z of sharp cheddar cheese in small cubes

Drain macaroni and while still warm mix all ingredients except tomatoes tuna and cheese. If you need extra miracle whip add small amounts at a time. Now once mixed chill for at least one hour or more then add the remaining ingredients mix well. Very filling meal you can add other veggies according to your preference but may need more miracle whip. Good luck! (07/21/2006)

Pasta Salad

Last night I had some leftover angel hair pasta so made some pasta salad with imitation crab meat, it was delicious.

I don't measure anything, just chop everything fine. I like it with about half as much veggies as pasta...finely chopped carrots, onions, celery, peppers, tomatoes, cauliflower. For dressing use sweet and sour dressing or make some up.

I like mine with not much dressing, feel it's better for us. For about 2 cups of pasta, 1 cup of veggies, and one package of imitation crab meat I put in about.

  • 3 T red wine vinegar (any kind would do)
  • 3 T sugar
  • 4 T olive oil
  • 1 teaspoon Natural Blend for Salad (or use oregano, basil, paprika, one teaspoon total)
Whisk these up then add the other ingredients and give it an hour or so to blend flavors. You can't go wrong really, lots of crunch, a little flavor, and pasta...it works. (07/21/2006)
