Mozzarella Tomato and Orzo Salad
Quick and easy!
- 1/2 cup uncooked orzo
- 3/4 cup mozzarella, cut in bite size cubes
- 1 roma tomato, seeded and cut in bite size pieces
- 2 tbsp fresh basil, chopped
- 1/2 tsp crushed red pepper flakes
- salt to taste
- 2 Tbsp. extra virgin olive oil, or more if needed
Cook orzo al dente according to package instructions. Drain and allow the orzo to cool.
Mix the mozzarella, tomatoes, basil, pepper flakes, and salt in a large serving bowl. Gently mix in the orzo and toss lightly to coat with the oil. Serve room temperature or chilled.
