Lima Bean Medley
- 1 large green pepper, chopped
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 tsp. olive or canola oil
- 1 1/2 cups fresh tomatoes, chopped
- 1 cup cooked fresh or frozen Lima beans
- 1 cup fresh or frozen corn
- 1/2 cup fresh basil, minced
- 1/2 tsp. salt
- 1/8 tsp. pepper
In a large nonstick skillet, saute the green pepper, onion, and garlic in oil until tender. Add tomatoes. Reduce heat and simmer uncovered for 5 minutes. Stir in Lima beans and corn; cover and simmer 10 minutes more or until vegetables are tender. Stir in the basil, salt, and pepper.
