Corn Tortilla Chips

Ingredients

  • 1 quart oil for frying
  • 1 (12 0z) package corn tortillas, cut into 6 wedges each
  • salt to taste

Directions

Heat oil in a large heavy saucepan (about 375).

In small batches, fry tortilla wedges until crisp. Remove from heat, drain on paper towels, and salt to taste

A candy thermometer or meat thermometer can help you figure out the temperature if you aren't sure.

Chicken And Noodles

Easy Chicken And Noodles

Ingredients:

  • 1 small can condensed cream of chicken soup undiluted
  • 3/4 cup milk
  • 1/3 cup grated parmesan cheese
  • 1/8 tsp. pepper
  • 3 cups cooked (wide) egg noodles
  • 2 cups cooked, cubed chicken

Directions:

In a saucepan, combine soup, milk, parmesan cheese and pepper. Stir in cooked noodles and cubed chicken.

Heat through.

Supper is now on. Enjoy!

Chicken and Noodles

Ingredients

  • 4 chicken breasts
  • 2 tsp. salt
  • 1 tsp. basil
  • 1/2 tsp. pepper
  • 2 cans chicken broth
  • 1 pkg. egg noodles

Directions

Rinse chicken and pat dry. Place in slow cooker. Sprinkle with basil, salt and pepper. Add chicken broth. Cook on low for 6 to 8 hours. Add egg noodles. Cook oh high for 45 minutes. Serve over hot mashed potatoes.

Chicken Elegante

Ingredients

  • 8 slices bacon (partially cooked)
  • 8 halves chicken breast (skinned and boned)
  • 1-2 1/2 oz. dried beef (chopped)
  • 2 cans cream of chicken soup (condensed and undiluted)
  • 1 cup sour cream

Directions

Wrap bacon slices around each chicken breast. Place in 8x8 baking dish. Combine soup and sour cream. Spoon over chicken. Sprinkle dried beef over the top. Bake at 225 degrees for 3 1/2 hours. Serve over rice or noodles.

Chicken Supremo!

Ingredients

  • 3 white chicken breasts (cut up)
  • 1 can mushroom soup
  • 1 can mushrooms
  • 1 cup sour cream
  • 1 stick margarine (melted)
  • 1/2 cup water
  • 1 small pkg. stuffing

Directions

Put chicken in greased casserole. Mix soup, mushrooms and sour cream. Pour over chicken. Mix stuffing, margarine, and water. Sprinkle over chicken mixture. Bake at 350 degrees for 45 minutes.

Chicken Waikiki

Ingredients

  • 1 can sliced pineapple
  • 1 cup sugar
  • 2 Tbsp. cornstarch
  • 3/4 cup cider vinegar
  • 1 Tbsp. soy sauce
  • 1 tsp. ginger
  • 1 chicken bouillon cube
  • 1 green pepper
  • 3-4 lbs. of chicken

Directions

Coat the chicken piece with flour and fry to golden brown. Put in a 9x13 inch pan with skin side up. Preheat oven to 350 degrees. Drain the pineapple juice in a measuring cup. Add water to make 1 1/4 cup. Combine sugar, cornstarch, juice, vinegar, soy sauce, ginger and the bouillon cube. Bring to a boil, stirring constantly. Boil until sauce in a golden brown and sticky. Pour over chicken. Bake, uncovered, 30 minutes. Then add the pineapple slices and the sliced green pepper. Baste well and bake another 30 minutes. (Authentic Hawaiian Recipe)

Chicken Supreme

Ingredients

  • 2 cups cook chicken
  • 2 cups raw macaroni
  • 2 cans cream of mushroom soup
  • 2 cups milk
  • 2 med. onions (chopped)
  • 1/2 tsp. slat
  • 1/4 tsp. pepper
  • 3 Tbsp. butter
  • 1 cup shard Cheddar cheese (grated)
  • Shoe string potatoes or potato chips

Directions

Combine all ingredients except shoe string potatoes. Put in casserole. Refrigerate overnight. Bake at 350 degrees for 1 hour and 30 minutes. Serves 8.

Kentucky Chicken Coating

Ingredients

  • 1 pkg. Good Seasons Italian dressing mix
  • 1/2 Tbsp. paprika
  • 1 envelope tomato soup mix
  • 1/2 tsp. salt
  • 1 1/2 cup self-rising flour

Directions

Mix all together and coat for frying or baking.
