Carmel Oat Bars
When I was a kid growing up my father used to make a wonderful bar called "Carmel Oat Bars". I have done several searches on the net and none of them sound like it. It is made with oatmeal, brown sugar and butter, that is cooked to make the carmel bar. You then placed chocolate chips on top till melted and then spread evenly. Chill and cut into bars. If anyone has this recipe I would appreciate it as I am not good at giving it a go myself.

Grandma Great's Homemade Thousand Island Dressing
Ingredients and Directions
- 3 egg yolks (cold)
- 1 1/2 cup cold salad oil
Beat eggs; add oil slowly.
- 1/2 cup ketchup
- 1/4 cup vinegar
- 1 tsp. sugar
- 2 hard-boiled eggs, chopped
- 1/2 tsp. salt
- garlic salt
Mix the rest of the ingredients and refrigerate.

Beef Stew (Freezer Meal)
By Amy Mahoney This nutritional favorite is best served over noodles and accompanied by warm rolls. Although great year round, this cozy dish can warm the whole family on cold nights.
List of Ingredients:
- 2 lbs stew meat (trimmed)
- 1/3 cup flour
- 3 table spoons vegetable oil
- 1 (28 oz) can seasoned stewed tomatoes, undrained
- 1 can (14.5 oz) French onion soup
- 1 onion coarsely chopped
- 1 teaspoon pepper
- 1 tablespoon garlic powder
- 5 medium red skin potatoes, skin-on and coarsely chopped
- 2 cups baby carrots
- 1 bag frozen peas
Directions for preparing the meal for the freezer:
- In a large pot, heat oil over medium heat.
- Coat beef with flour (this may be done in a bowl, however a paper grocery bag works best).
- Add beef and cook until browned. Add onion soup, tomatoes, pepper and garlic powder and simmer for about 15 minutes.
- Add remaining ingredients, and simmer on low for about 90 minutes or until potatoes and carrots are soft.
Slow cooker option: After simmering transfer beef, soup, tomatoes, pepper and garlic powder to slow cooker. Add remaining ingredients and cook on low for eight hours, high for four.
Directions for preparing the frozen meal:
Allow to cool to room temperature and place in single-meal sized containers (the size of the container will depend on how many people you usually serve). Freeze.
Allow time to defrost in the refrigerator or defrost in microwave until softened. Transfer from containers to large pot and simmer until thoroughly cooked.

Shoestring Potatoes Salad
Ingredients
- 2 cans tuna
- 1 cup carrots, shredded
- 1 cup celery, chopped
- 1/4 cup onion, chopped
- 1/2 cup Miracle Whip (or generic salad dressing)
- 1 Tbsp. each vinegar and mustard
- 1 cup shoestring potatoes
Directions
Mix all together thoroughly. Add shoestrings just before serving.

Hot Cider Sauce
Ingredients
- 1 cup brown sugar
- 1 cup apple cider
- 1 Tbsp. butter
- 1/2 tsp. lemon juice
- 1/4 tsp. cinnamon
- 1/8 tsp. nutmeg
Directions
In a saucepan, combine brown sugar, cider, butter, lemon juice, and spices. Bring to a boil and simmer 15 minutes or until sauce is slightly thickened. Serve warm on waffles or pancakes.

Beef Stroganoff
Ingredients
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1 lb. sirloin
- 2 Tbsp. butter
- 1 can sliced mushrooms
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 Tbsp. butter
- 3 Tbsp. flour
- 1 Tbsp. tomato paste
- 1 1/4 cup beef stock
- 1 cup sour cream
Directions
Cut meat into 1/4 inch strips. Combine flour and salt and dredge meat. Add butter to skillet and brown meat. Add mushrooms, onion, and garlic. Cook 3 or 4 minutes. Remove meat mixture to plate. Add butter to drippings, blend in flour. Add tomato paste, stir well. Pour in cold meat stock, cook and stir till thickened. Return meat mixture to sauce, add sour cream. Heat briefly. Serve over hot noodles or rice. Serves 4.

Cheezy Baked Ziti
Ingredients
- 1/2 pound ziti
- 16 oz. ricotta cheese (or cottage cheese)
- 3 cup mozzarella cheese
- 1 - 26 oz. jar spaghetti sauce
- 1/2 cup parmesan cheese
Directions
Heat oven to 350 degrees F.
Cook ziti according to directions.
Drain pasta. Place ziti in large bowl and mix with ricotta (or cottage cheese) and 1/2 of mozzarella cheese. Grease 9x13 pan. Spread 1/2 of spaghetti sauce on bottom of pan. Add ziti mixture. Cover with remaining sauce and bake uncovered for about 20 - 30 minutes until casserole bubbles around the edges.

Artichoke Quiche (Freezer Meal)
By Amy Mahoney A perfect addition to any brunch or an easy supper for two, this quiche is delicious with a mimosa in the morning or a salad and white wine in the evening.
List of Ingredients:
- 4 eggs beaten
- 1/2 cup grated Parmesan cheese
- 1 can artichoke hearts (drained)
- Frozen pie crust
- 1/2 lb mozzarella cheese
Directions for preparing the meal for the freezer:
- In large bowl beat eggs.
- Add the rest of the ingredients to eggs, mix and pour on top of the pie crust.
- Place quiche on top of a cookie sheet for easy removal from oven and to avoid spillovers
- Bake for 45 minutes at 350
- Allow time to cool, cover and freeze
Directions for preparing frozen meal:
Bake at 350 for about 60-75 minutes or until thoroughly cooked

Manhattan Deli Salad
Ingredients
- 1 package spiral pasta (plain or spinach)
- 1/4 cup pitted black olives
- 1 cup chopped red or green pepper
- 2 cup chopped pepperoni
- 1 small red onion
- 3/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 cup Italian dressing
Directions
Cook pasta according to package. In large bowl, combine all ingredients - toss. Serve chilled.

"Don't Knock It Till You've Tried It" Dip
Ingredients
- 1 package frozen chopped spinach (thaw and drain in colander)
- 1 cup sour cream
- 1 cup mayonnaise
- 1 package Knorr's vegetable soup mix (or generic)
- 1 small can water chestnuts, sliced
Directions
Mix all ingredients together and let stand for several hours to improve flavor.

Mexican Casserole
Ingredients
- 1 pound hamburger
- 1 can Rotel tomatoes
- 1 can cream of mushroom soup
- 1 can ranch style beans
- tortilla chips
- shredded cheese
Directions
Cook hamburger, drain. Add tomatoes, soup and beans line bottom of casserole dish (9x13 inches) with tortilla chips then beef mixture. Cover with shredded cheese and bake at 350 degrees F until cheese melts.
