South Sea Island Pork Kabobs

Yield: 6 servings

Ingredients

  • 1-1/2 pounds lean pork tenderloin, cut into 2 to 3 inch cubes
  • Marinade:
  • 2 Tablespoons pineapple juice concentrate
  • 1 Tablespoon minced ginger
  • 1/3 cup water
  • 2 Tablespoons lime juice
  • 2 teaspoons dark rum

Directions

Place the pork cubes in a zip-top bag.

Combine all the ingredients for the marinade. Add to the pork. Let the pork marinate for several hours.

Thread 6 (8 to 10 inch) skewers with the marinated pork. Grill 6 inches from the heat source for about 10-15 minutes, rotating the skewers. Make sure the pork is completely cooked through (there should be no traces of pink). Serve over rice if desired.

Candied Apples

Ingredients

  • 8 apples
  • 3 cups white sugar
  • 1/2 cup white corn syrup
  • 1/2 cup water
  • 8 cinnamon red hot candies
  • 1 teaspoon red food coloring

Directions

Insert a wooden craft stick into the bottom of each apple. Butter a baking sheet and set aside. Combine sugar, corn syrup and water in a heavy saucepan over medium heat. Heat, without stirring, to 270 to 290 degrees F (132 to 143 degrees C), or until a small amount of syrup dropped into cold water forms hard but pliable threads. Remove from heat and stir in candies and food coloring until just mixed. Holding each apple by its stick, quickly twirl in syrup, tilting pan to cover apple. Lift out of syrup, turning to allow drips to adhere to apple. Place apples on prepared baking sheet to cool completely.

Quick Candied Apples

Ingredients

  • 1 pkg. cinnamon hot candy*
  • 1 cup water
  • 3/4 cup sugar
  • 6 medium apples (Winesap or Jonathan)

Directions

Heat in skillet or heavy saucepan, water, sugar and candy; cook until all candy has melted. Halve and core apples. Add to syrup and cook slowly for 15 minutes. Put apples in ovenproof pan. Pour syrup over and finish cooking until waxy, about 20 minutes in 375 degree oven. Add water if apples aren't done and need to be cooked longer.

*recipe doesn't say what kinds of candy, but I imagine it's RedHots or Cinnamon Imperials. My aunt has a recipe similar to this that she uses RedHots in. She says this is a great dish for potlucks.

Impromptu Italian Skillet Casserole

Something I just threw together last night.

Ingredients

  • 1 pound ground turkey
  • 2 green peppers, diced
  • 2 small yellow onions, diced
  • 1 can (4 ounces) sliced mushrooms, drained
  • 1 can (15 ounces) tomato sauce
  • 1 1/2 cups penne pasta, cooked
  • 1/4 cup shredded mozzarella cheese

Directions

Brown turkey, peppers and onions. Drain any excess fat. Add mushrooms and tomato sauce. Simmer for a few minutes.

While meat mixture is simmering, prepare penne according to package directions. Drain. Stir into meat mixture until pasta is thoroughly coated with sauce.

Top with cheese and serve. Makes about 4 servings.

Cake for Wild Birds in Winter Months

Ingredients

  • 1 lb. peanut butter
  • 1 lb. oatmeal
  • 1 lb. lard
  • 1 lb. corn meal

Directions

Mix all ingredients in a pan and let dry till hard. Do not bake.

Baked Chicken Nuggets

Chicken Nuggets I

4 Servings, about 3 ounces each

Ingredients

  • 1-1/2 pounds Chicken thighs, boneless, skinless
  • 1 cup Ready-to-eat cereal, cornflakes, crumbs
  • 1 teaspoon Paprika
  • 1/2 teaspoon Italian herb seasoning
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Onion powder

Directions

Preparation Time:15 Minutes
Conventional Cooking Time:12 To 14 Minutes
Microwave Cooking Time:6 To 8 Minutes

1.Remove skin and bone; cut thighs into bite-sized pieces.

2. Place cornflakes in plastic bag and crush by using a rolling pin.

3. Add remaining ingredients to crushed cornflakes. Close bag tightly and shake until blended.

4. Add a few chicken pieces at a time to crumb mixture. Shake to coat evenly.

Conventional Method

1. Preheat oven to 400F. Lightly grease a cooking sheet.

2. Place chicken pieces on cooking sheet so they are not touching.

3. Bake until golden brown, about 12 to 14 minutes.

Microwave Method:

1. Lightly grease an 8- by 12-inch baking dish.

2. Place chicken pieces on baking dish so they are not touching. Cover with waxed paper and cook on high.

3. Rotate chicken every 2 to 3 minutes. Cook until tender, about 6 to 8 minutes. Note:

To remove bone from chicken thighs:

1. Place chicken on cutting board. Remove skin from thighs.

2. Turn chicken thighs over.

3. Cut around bone and remove it.

Chicken Nuggets II

Yield: 6 servings

Ingredients

  • 1 cup dry bread crumbs
  • 1/4 cup Parmesan cheese
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1-1/2 pound boneless, skinless chicken breasts, cut into 2-inch cubes
  • 1 Tablespoon olive oil

Directions

Preheat the oven to 350 degrees F. Combine all ingredients except chicken and oil in a plastic bag. Place chicken cubes in the bag and shake well.

Place the cubes on a nonstick cookie sheet. Drizzle olive oil over the cubes, or mist lightly with olive oil from a spray bottle. Bake the cubes for about 10 minutes until chicken is cooked through and tender. Serve cold.

Cheerio Treats

Ingredients

  • 3 Tbsp. butter
  • 6 cup marshmallows
  • 1/2 cup baking powder
  • 5 cup Cheerios

Directions

Grease 9x13 inch pan. Melt butter in saucepan on low heat. Add marshmallows and baking powder. Stir until melted and smooth. Remove from heat. Add cereal until well coated. Press mixture into pan. Cool; cut in pieces.
