These cookies are soft, not crunchy and have just the right amount of sweetness. This recipe does not make a whole bunch, only about 16 to 20 cookies. That's a good thing for me because I would just eat more if I had more.
Ingredients:
3 Tbsp. butter, room temperature
1/2 cup brown sugar
1/4 cup honey
1 egg or equivalent egg substitute
1 Tbsp. water
1/2 cup plain flour (I use 1/4 cup each whole wheat and plain)
1/2 tsp. salt
1/4 tsp. baking soda
1 1/2 cups old fashioned rolled oats
1 /2 cup chopped dates, raisins, chocolate chips, or nuts (optional)
Directions:
Preheat oven to 350 degrees F. Mix together the butter, brown sugar, honey, egg, and water thoroughly. Mix together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix. Add any optional ingredients if desired. Drop by heaping teaspoon onto the cookie sheet. Bake 12 to 15 minutes. Cool on a wire rack.
