Zucchini Walnut Bread

Slices of zucchini nut bread.This zucchini nut bread is soft and sweet. You can enjoy it warm or cold. A little butter or cream cheese on it is truly delicious.

Ingredients:

  • 2 cups grated raw zucchini (unpeeled)
  • 3 eggs
  • 1 3/4 cups sugar
  • 1 cup vegetable oil
  • 2 cups flour
  • 1/4 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 1 cup chopped walnuts
  • Optional: brown sugar (for the tops)

Directions:

Preheat oven to 350 degrees F. Grease two 4x8 loaf pans.

In a large bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon. Add the zucchini and vegetable oil, mix well.

In a small bowl, beat eggs. Add vanilla and mix together. Add egg mixture to the flour mixture. Add walnuts, if desired. Stir until just combined.

Pour into prepared loaf pans. (Optional: Sprinkle tops with a little brown sugar.)

Bake for 1 hour or until a toothpick comes out clean. Remove from the oven and allow to cool slightly before removing from pan and cutting.
