Dessert Recipes for Two

With my son away at college I'm in need of cake and other dessert recipes for two. Preferably those baked in a 8-inch square pan or 9-inch round pan. I'm a chocoholic but eating a 13x9 cake gets to be a little much, even for me. I also like apples, peaches and bananas if you have any recipes for two along that line. Many thanks!

Quick Meal for the Family

Just got home, tired, need a quick meal the whole family will enjoy. Try this: Ingredients

  • 1 lb. ground beef, browned/drained
  • 1 can red kidney beans
  • 2 cans pinto beans (preferably seasoned)
  • 1 can stewed tomatoes in pieces
  • 1 tsp. hot sauce (more if preferred)

Directions

Combine ingredients, heat on medium high for 5 minutes and serve over Fritos with shredded iceberg lettuce and the shredded cheese of your choice; takes only about 20 minutes to put together and provides a healthy, balanced meal for your family while leaving time for you to relax after a busy day.

Easy No-bake Pudding Cookies

Ingredients

  • 2 cups sugar
  • 3/4 cup butter or oleo
  • 2/3 cup milk
  • 1 small box instant pudding, any flavor
  • 3 1/2 cups quick oats
  • 1/2 tsp. vanilla

Directions

Stir together first 3 ingredients and bring to a boil for 3 minutes, then remove from heat. Mix in next 3 ingredients and let stand 5 minutes.

Drop by tsp. on waxed paper. Let cool and store in fridge. Flavor of pudding determines flavor of cookies.

I made these today using Splenda in place of sugar and sugar-free butterscotch pudding.

Italian Pork Chops

Ingredients

  • 8 pork chops, about 3/4 inch thick
  • 1 Tbsp. butter
  • 1/4 tsp. garlic powder
  • 1 tsp. paprika
  • 5 Tbsp. lemon juice
  • 3 Tbsp. Worcestershire sauce
  • 2 tsp. marjoram

Directions

Brown chops in butter on both sides; remove to platter. Add remaining ingredients to skillet and bring to a boil. Return chops to skillet; reduce heat and cover. Simmer for about 30 minutes. Serves 8.

Stuffed Pork Tenderloin

Ingredients

  • 2 lb. pork tenderloin, 4 pieces
  • 4 Tbsp. butter
  • 1 medium sized onion, chopped
  • 1/2 cup chopped fresh mushrooms
  • 1 1/2 cups fresh bread crumbs
  • 1/2 cup chopped fresh parsley
  • 1/2 tsp. sage
  • 1/2 tsp. rosemary
  • salt and pepper
  • 1 egg, beaten
  • 2 slices bacon

Directions

Split tenderloin lengthwise, partially through to butterfly. Open and place between waxed paper; pound to flatten. Saute' onion and mushrooms in butter until tender. Add bread crumbs and cook until slightly crisp. Add herbs, salt, and pepper. Cool. Add enough egg to moisten. Spread stuffing over half the meat, leaving 1/4 inch border on all sides. Fold to close. Place 1/2 bacon strip over each piece and tie with a string. Transfer to 9x13 inch baking pan and roast at 350 degrees F for 1 1/2 hours. Serves 4

Super Bowl Cola Cake

Ingredients

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 1/2 cups small marshmallows
  • 1/2 cup butter or margarine
  • 1/2 cup vegetable oil
  • 3 Tbsp. cocoa
  • 1 cup Black Cherry Vanilla cola
  • 1 tsp. baking soda
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp. vanilla extract

Directions

Preheat oven to 350 degrees F. In bowl, sift sugar and flour. Add marshmallows. In saucepan, mix butter, oil, cocoa, and cola. Bring to a boil and pour over dry ingredients; blend well. Dissolve baking soda in buttermilk just before adding to batter along with eggs and vanilla extract, mixing well. Pour into well greased 9x13 in pan and bake 35-45 minutes. Frost with your favorite frosting.
