This is a very tasty, cheap and extremely easy dish to make. I had been craving boxed stuffing for a while, found this recipe but just never made it. Boy, am I glad I did!
Ingredients
- 1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
- 1-2/3 cups hot water
- 1-1/2 lb. lean ground beef (we substituted with 1 pkg. Morningstar Veggie Crumblers)
- 1 large red pepper, chopped (or substitute with a vegetable of your choosing)
- 1 can (14 oz.) stewed tomatoes, undrained
- 1/2 cup ketchup
- 1/4 cup Kraft Catalina Dressing
- 1 Tbsp. chili powder
Directions
Mix stuffing mix and hot water just until moistened; set aside. Meanwhile, brown meat in large skillet; drain. Add peppers, tomatoes with their liquid, ketchup, dressing and chili powder to skillet. Bring to boil. Reduce heat to medium-low; cover. Simmer 5 minutes or until peppers are crisp-tender. Top with prepared stuffing. Cover; simmer 3 minutes.
