Yams and Apricot
- 1 can yams, drained (29oz.)
- 1 can apricot halves, drained (save juice) (17oz.)
- 3 Tbsp. brown sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/8 tsp. cinnamon
- 1/3 cup raisins
- 1/2 tsp. grated orange peel
Arrange apricots over yams in 2 qt. casserole dish. Use apricot juice and enough water to make 1 cup juice. Put in saucepan and combine with remaining ingredients. Stir over low heat until mixture thickens. Pour mixture over yams and apricots. Bake, uncovered, 20 minutes at 350 degrees F, basting occasionally.
