Spam (the meat kind) in Place of Ham

I have found that Spam is a great and inexpensive substitute for ham in scalloped potatoes. Just use the same way you would use regular ham.

It pays to boil it first, then skim off all the disgusting fatty substance that rises to the top of the pan! I was horrified to learn that the last can I purchased was almost 40% fat!
