Measuring Yeast

If I buy yeast in the 1/4 dry packs, how do you come up with 1 1/4 cup?

Yep, buy in bulk. It's much cheaper that way! It can be frozen also (with no damage to the yeast).

You can buy large amounts of yeast at any market that sells in bulk. In my area it's at Winco. I like to buy at Winco because you don't have to pay for a membership like you do at Costco or Sam's Club. You can also purchase it in 8 ounce jars (same company that makes those packets you are asking about) and larger markets generally carry it.

I buy my yeast in bulk at Sam's. One tablespoon will be as close as you can get to the 1/4 oz. pkg, and 16 tablespoons equal 1 cup. So you will need 20 tablespoons to equal 1 1/4 cups.
