Very good veggie recipe.
- 6-8 large potatoes, peeled
- 1 cup sour cream
- 1/2 cup margarine
- 1(10 oz.) pkg. frozen spinach, thawed
- 1/2 cup chopped onion
- 1 Tbsp. sugar
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 cups shredded cheddar cheese
Cook potatoes in boiling water in saucepan until tender; drain. Mash with sour cream and margarine in bowl. Add spinach, onion, sugar, salt and pepper; mix well. Spoon into 2 quart baking dish. Sprinkle with cheese. Bake at 400 degrees F for 20 minutes or until lightly browned and cheese is melted.
