Recipes for Controlling Diabetes with Diet

My friend has just been diagnosed with diabetes and needs to control it with her diet before it gets worse. She is a professional caterer, so this is going to be EXTREMELY difficult for her. Any suggestions, recipes etc. would be very welcome!

We use the adkins diet - low carb and no sugar works great.
