Add Rice Flour To Your Baking

For an interesting grainy texture, substitute 1/4 - 1/2 cup of rice flour for the wheat flour in a biscuit, scone, or cookie recipe. It is also delicious. People will wonder how you did this!

Rice flour can also entirely replace wheat flour in baking. Chamberlains has some of the best brownies I've ever tasted and they are made of rice flour. You get a dark intense chocolate when you use it.

I buy rice flour at Publix.

On my husband's birthday, our daughter decided to bake him a cake and decorate it herself. She was 10. This was the best cake he had ever received.

Ice Cream Cone Cupcakes

Cupcakes can be messy for little ones when they are trying to remove the cake from the paper. Instead of using the paper liners, put flat bottom type ice cream cones into the muffin pan. Mix up the cake batter and pour into the cones, filling about 2/3 full and bake according to directions for the cake batter you are using. Top with your favorite icing and sprinkles and you have a portable feast for birthday parties, class parties, picnics, etc. The kids like them and you will enjoy the ease of cleanup.

Today's Contest Recipes:

Chili Cheese Enchiladas

These enchiladas have less than 5 ingredients.

Ingredients

  • 1 package flour tortillas
  • 1 large can red enchilada sauce
  • 1 can chili without beans
  • 1 package Mexican quesadilla melting cheese

Directions

Heat red sauce in a skillet until medium warm. Grate cheese. Dip tortillas in red sauce, put cheese in middle and roll up like enchilada. Please enchilada in baking dish. With left over red sauce add 1 can of chili and mix together. Pour this over enchiladas and bake on 400 degrees F for 25 minutes.

I serve this with sour cream, tomatoes, onions or any toppings that you would like.

Summer Fruit Salad

I used to love fruit salad, but it's kind of soft. My mom used to put a drained can of mixed fruit cocktail and a partially drained can of both mandarin oranges and pineapple chunks in a bowel. Then, came the chunked apples and bananas, and any other fruit you like to add "more of" then what is in the cocktail. She then put in shredded lettuce and enough mayo and whipped cream to make a great crunchy, semi-sweet salad. It's very good on hot days. Give it at least 30 minutes to chill.

Source: My mom used to make this all year round, giving the winter blahs a chase when you remember the sweet tastes of summer fruit!!

Fried Cucumbers

Cut off peel of cucumber and slice it. Bread in flour. I cut mine both ways, whatever you prefer. Heat oil, should be medium high. Fry one side, salt and pepper then turn and fry other side. Cook until nice and brown, not burned.

If you like fried green tomatoes, this is really good. My family loves them. This is an old recipe from my mom. Enjoy!

Ranch Tacos

Ingredients

  • 1 lb. ground beef or turkey
  • 1 (16oz) can black beans
  • 1 (1 1/4 oz) envelope of taco seasoning mix
  • 1 (1 oz) envelope of ranch dressing mix

Directions

Fry meat till done and drain off excess oil. (I like to rinse with hot water). Add remaining ingredients to beef in pan. Cover and simmer on low for 1 hour.

Serve on soft flour tortillas with a bit of sour cream and grated cheddar.

Fantastic yummy new twist to regular already yummy dinner!

Spaghetti Pizza

Ingredients

  • 16 oz. spaghetti cooked and drained
  • 2 eggs
  • 1 cup milk
  • 32 oz. (2 jars) Ragu Spaghetti Sauce
  • 1 lb. Hamburger
  • 3-1/2 oz. Pepperoni
  • Garlic Salt - sprinkle liberally
  • 2 cups Mozzarella Cheese - shredded

Directions

Mix together. Bake 350 degrees F for 30 minutes.

Robin's Recipe Corner:

Creole Bean Soup

Ingredients

  • 2 cups navy beans
  • 1 ham bone
  • 2 cups shredded carrots
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped green pepper
  • 1 tsp. salt
  • 2 cups canned tomatoes

Directions

Soak beans overnight in 6 cups water in large saucepan. Add remaining ingredients except tomatoes. Simmer for 2 1/2 hours or until beans are very tender. Remove ham bone. Cut ham from bone and add to soup. Mash beans. Stir in tomatoes. Simmer until hot.

Chicken Cornelia

Ingredients

  • 4 chicken breasts, boned and skinned
  • 2 cups sour cream
  • 2 cans cream of chicken soup
  • 1 1/2 envelope dry onion soup mix
  • 1 can Chinese noodles

Directions

Place chicken breasts in casserole in single layer. Combine next 3 ingredients in bowl, mixing well. Pour over chicken. Bake, uncovered, at 400 degrees F for 50 minutes. Sprinkle noodles over chicken. Bake for 10 minutes longer.

Banana Waffles

Ingredients

  • 1 3/4 cups sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. sugar
  • 3 eggs, separated
  • 2-4 Tbsp. oil
  • 1 1/2 cups milk
  • 2 medium bananas, mashed

Directions

Sift first 4 ingredients into bowl and make a well in center. Combine egg yolks with remaining ingredients in bowl, beating well. Beat egg whites until stiff, but not dry. Pour banana mixture into dry ingredients, stirring until just mixed. Fold in egg whites until barely blended. Bake in waffle iron using appliance directions.

Crab Meat Imperial

Ingredients

  • 1 Tbsp. chopped green pepper
  • 1 Tbsp. chopped pimento
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • dash pepper
  • dash paprika
  • 1 cup milk
  • 1 egg yolk, beaten
  • 1/4 tsp. dry mustard
  • 1 Tbsp. capers, drained
  • 1/2-1 tsp. Worcestershire sauce
  • 2 packages frozen king crab, thawed (6 oz. each)

Directions

Saute' green pepper and pimento in butter in saucepan until tender. Add next 4 ingredients, stirring until smooth. Add milk gradually. Cook until thick, stirring constantly. Stir a small amount of hot mixture into egg yolk. Stir egg yolk into hot mixture. Add mustard, capers and Worcestershire sauce, blending well. Fold in crab meat. Pour into casserole. Bake at 350 degrees F for 30 minutes.

Lemon Loaf

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk
  • grated rind and juice of 1 lemon

Directions

Cream butter and 1 cup sugar together in bowl. Add eggs, beating well. Sift dry ingredients together. Add to creamed mixture alternately with milk, beating well after each addition. Stir in rind. Pour into 5x9 inch loaf pan. Bake at 350 degrees F for 45 minutes. Mix lemon juice with remaining 1/2 cup sugar. Spoon over hot bread. Cool in pan.

Chicken Pie

Ingredients

  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 Tbsp. butter
  • flour
  • 1 1/2 tsp. salt
  • pepper, to taste
  • 2 cups milk
  • 1 cup chicken broth
  • 1 can mushroom soup
  • 1 smll can pimentos (opt.)
  • 1 chicken, cooked, boned
  • 3 Tbsp. oil
  • 3 tsp. baking powder
  • 3 cups grated sharp cheese

Directions

Saute' onion and celery in butter in skillet until tender. Blend in 4 tablespoons flour, 1/2 teaspoon salt & pepper. Stir in 1 1/2 cups milk and chicken broth. Cook until smooth and thick, stirring constantly. Add soup and pimentos, blending well. Place with chicken in large baking dish. Combine 1 1/2 cups flour 1 teaspoon salt, 1/2 cup milk and remaining ingredients except cheese in bowl, mixing well. Roll out on floured surface to 8x12 rectangle. Spread cheese over dough. Roll as for jelly roll and slice. Place slices over casserole. Bake at 375 degrees F until biscuits are brown.
