Ingredients
- 3 cups cooked, diced potatoes
- 1/2 cup sliced celery
- 1 Tbsp. chopped green pepper
- 1 Tbsp. chopped pimento
- 2 Tbsp. minced onion
- 2 Tbsp. chopped dill pickle
- 1 cup mayonnaise
- 1 Tbsp. lemon juice
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. dry mustard
- 1 cup cottage cheese
Directions
Combine first 6 ingredients in bowl. Chill vegetables thoroughly. Blend mayonnaise and lemon juice with seasonings in small bowl. Combine chilled vegetables, cottage cheese and dressing, tossing lightly.
