Chicken with Garlic Cloves

Does anyone have the Richard Simmon's Deal A Meal Cookbook from the 90's? I am looking for a recipe that was in that cookbook. It was Chicken with Garlic cloves. My daughter made it for us when we were visiting. She no longer has the cookbook and we are both searching for the recipe.

If I remember correctly it was Chicken Thighs. What I do remember is that it called for 40 cloves of garlic. I know, that sounds awful, but it is roasted and the garlic turns out to be sweet and delicious. Here's hoping somebody can help with this request.

Today's Recipes:

Puff Balls

  • 1 cup sugar
  • 1/3 cup white corn syrup
  • 1/3 cup butter or margarine
  • 1/4 tsp. salt
  • 1/4 tsp. vanilla
  • 1 qt. popped corn
  • 1 qt. wheaties
  • 1 qt. cheerios
  • 1 qt. puffed rice
Boil sugar, syrup, water, butter and salt until it spins a long thread. Add vanilla and pour over popcorn and other puffs. It doesn't take long to make, about 10-15 minutes.

Glazed Doughnuts

  • 1 1/2 cups scalded milk
  • 2 packages. dry yeast
  • 3/4 cup sugar
  • 4 1/2 - 5 cups flour
  • 3/4 cup margarine or butter
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1 cup mashed potatoes
Mix together sugar, salt, butter, mashed potatoes, eggs, scalded milk. Let mixture stand until lukewarm and add yeast. Mix in flour. Let rise once and roll out. Cut and let rise again and fry in deep fat. Makes 60 doughnuts.

Glaze Ingredients

  • 1 package powdered sugar
  • 1 tsp. vanilla
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. flour
  • 2 Tbsp. milk
Mix and use for glaze on doughnuts.

Chicken Diable

  • 1 chicken, cut up (3 lb.)
  • 4 Tbsp. butter or margarine
  • 1/2 cup honey
  • 1/4 cup prepared mustard
  • 1 tsp. salt
  • 1 tsp. curry powder
Remove skin, melt butter in shallow baking dish. Roll chicken in butter mixture and coat both sides. Arrange meat in a single layer in same pan. Bake in moderate oven (375 degrees F) for 1 hour or until chicken is tender.

Pork Chops With Rice

  • 4 loin pork chops
  • 1/2 cup chopped onion
  • 1 1/2 cups canned, condensed beef bouillon, undiluted
  • 1/2 tsp. paprika
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 cups raw regular white rice
  • 2 pimientos, drained and cut into strips
Preheat oven to 350 degrees F. Wipe chops with damp paper towels. Slowly heat large, heavy skillet until hot (about medium high). Brown chops, about 10 minutes on each side. Remove to 2 qt. casserole. Drain all but 1 Tbsp. fat from skillet, add onion, saute until tender. Add bouillon, 1 cup water, paprika, salt and pepper; mix. Sprinkle rice over chops. Pour onion mixture, bake, covered 40-45 minutes. Add pimiento during last 10 minutes. Chops should be tender and rice fluffy, with most of the liquid absorbed.

Versatile Coating Mix

  • 3/4 cup dry bread crumbs
  • 3/4 cup grated parmesan cheese
  • 1/2 cup flour
  • 1/4 cup dried parsley flakes
  • 3 T cornmeal
  • 1 T dried minced onion
  • 3/4 tsp garlic powder
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 3 T shortening
Combine the first 10 ingredients in a bowl. Cut in shortening until mixture resembles fine crumbs. Store in airtight container in cool dry place or freeze for up to 6 months. Makes 3 cups. Use to coat chicken, fish, or even pork

Asparagus Peking Style

  • 2 Tbsp. oil
  • 1/4 chicken broth
  • 1/4 water
  • 1 Tbsp. sherry
  • 2 Tbsp. soy sauce
  • 1 Tbsp. cornstarch
  • 1 can drained asparagus
Heat pan and add oil. Add remainder of ingredients except asparagus. Cook until it comes to a boil. Shut off flame or move pan off ring. Now add asparagus and toss lightly.

Mocha Shakes

My family loves the Mocha shakes we get at Dairy Queen, etc., but at $3.50 a pop for a small, it's way too expensive! We've improvised at home, and now the Mocha Shakes are the favorite drinks of the house. Easy!

For a blenderful:

  • 1 cup leftover coffee (cold)
  • 1 cup milk
  • 2 cups chocolate ice cream
  • Generous amount of Hershey's chocolate syrup
The best part, you can add or take away from this recipe and make your own mix, add fruit, chopped cookies, etc. Better than spending the money! Yum, yum!

Recipe For A Cold Depressing Day

  • 1 good book
  • 1 cup fresh brewed coffee
  • 1 pkt. sugar free cocoa mix
  • 1 heaping tsp. powdered coffee creamer
  • artificial sweetener (opt.)
Combine all ingredients except book. Insert candy cane (use to stir with). Make yourself comfortable and cover yourself with a warm cozy throw. Read your book and enjoy your coffee.

When you manage to pull your head out of the book or awaken from a nap, life will feel great.
