Dressing:
Ingredients
- 1 1/2 cups vinegar
- 1 1/2 cups olive oil
- 1/3 cup light soy sauce
- 3 tsp. sesame oil
- 2 tsp. garlic powder
- 1 1/2 tsp. ground ginger
- 1 tsp. ground black pepper
- 1/2 tsp. red pepper flakes
- 6 Tbsp. chopped cilantro or parsley
Directions
In medium bowl combine vinegar, olive oil, soy sauce, sesame oil, garlic powder, ginger, pepper, red pepper flakes and cilantro or parsley. Dressing can be made ahead and refrigerated for up to one week. Bring to room temperature before using.
Salad:
Ingredients
- 1/3 cup sesame seeds
- 1 1/2 lb. rotelli pasta, cooked and drained
- 5 cups shredded cooked chicken
- 1 1/2 cups diced red bell pepper
- 3/4 cup thinly sliced green onion
- 1 cup shredded carrot
Directions
In small nonstick skillet stir sesame seeds over medium heat until golden brown. In large bowl combine pasta, chicken, bell pepper, green onion, carrot and sesame seeds. Just before serving add dressing and toss well.
