Mini Meat Loaves

Ingredients

  • 3 eggs (beaten with fork)
  • 2 lbs. hamburger
  • 1 1/3 cup bread crumbs
  • 2 tsp. salt
  • 1 small onion (finely chopped)
  • 8 Tbsp. ketchup
  • 4 Tbsp. brown sugar
  • 1 tsp. dry mustard

Directions

Preheat oven to 350 degrees. Using hands, mix well the first 5 ingredients.. Press meat mixture into muffin tins. Bake 10 minutes. While meat loaves are cooking, stir together the remaining 3 ingredients. Pour over the top of loaves and bake another 5 to 10 minutes or until done.

Salsa Meatloaf

Ingredients

  • 1 lb. lean ground beef
  • 1/2 cup quick cooking rolled oats
  • 1 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup thick and chunky salsa
  • 1 egg (slightly beaten)

Directions

Heat oven to 350 degrees. In a large bowl, combine all ingredients; mix well. In ungreased 9 inch square or regular loaf pan, bake at 350 degrees for 50-60 minutes or until meat is well browned and firm. Let stand 5 minutes before slicing. If desired, serve with any remaining salsa.

Chicken and Rice Casserole

Ingredients

This recipe was given to my by my sister-in-law right after her brother and I got married. Every time I have to prepare a dish for some occasion, it is requested that I bring this one.

  • 1 lb. boneless, skinless chicken breast, cooked and cubed
  • 1 1/2 cup chicken broth
  • 1 1/2 cup minute rice
  • 8 oz sour cream
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 tube ritz crackers, crushed
  • 1 stick butter, melted

Directions

Combine first 6 ingredients. Pour into a baking dish (I coat my baking dish with cooking spray). Mix the ritz crackers and butter together and spoon over the top of the chicken mixture. Bake uncovered 1 hour at 350 degrees.

This is so easy to do and everyone I have served it to has just loved it!

Cheeseburger Meat Loaf

Ingredients

  • 2 eggs
  • 1/3 cup milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 cup cooked rice
  • 1 1/2 lbs. lean ground beef
  • 6 slices American cheese
  • 1/2 cup BBQ sauce

Directions

Beat eggs in a large bowl. Add milk, salt, pepper, rice and ground beef. Place 1/2 of meat in meat loaf pan. Arrange cheese slices over meat. Spread remaining meat over cheese. Spoon BBQ sauce on top. Bake at 350 degrees for 50 minutes. Serves 6 to 8.

Edwin's Meat Loaf

Ingredients

  • 1 pkg. Stove Top stuffing mix
  • 1 cup milk
  • 2 eggs
  • 2 lbs. ground beef
  • 1/2 cup catsup

Directions

Soften first 3 ingredients. Add beef and catsup. Bake in meat loaf pan for 1 hour and 15 minutes at 350 degrees.

Best Beef Brisket

Directions

This is how cook the best brisket you will taste in your whole life. First of all marinate brisket overnight in your favorite marinade (I use Claudes). I have a smoker with a water pan on the 2nd level, fill the charcoal pan on the bottom full (I mean full) of charcoal, light and let coals get grey, put in water pan and fill with water or marinade from brisket.

Put brisket in foil pan and cover loosely with foil, put on smoker and add wood chunks directly to fire, I use mesquite. I usually get a 12 to 14 pound brisket and cook for 10 hours adding wood chunks to keep it smoking.

After 10 hours take the brisket out of the pan and place directly on grill and cook for 2 more hours adding more wood chunks, this makes it crispy on the outside and juicy on the inside.

Result is a brisket with about an 1 1/2" smoke ring and so tender it will just melt in your mouth. Thats how some of us folks from Texas cook a brisket even people from New York would sing about.

Orange Mist

Ingredients

  • 1(46 oz.) can 100% vegetable juice
  • 1 (6 oz.) can orange juice concentrate
  • 1 1/2 cups seltzer water or orange flavored seltzer water

Directions

Mix vegetable juice and orange juice. Add seltzer water. Serve over ice.
