Pumpkin Delight

Ingredients:

  • 5 eggs, beaten
  • 1 cup sugar
  • 1 can sweetened condensed milk
  • 1 can pumpkin (15 oz.)
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • yellow cake mix
  • 2 Tbsp. butter
  • 1/2-3/4 cup chopped pecans
  • whipped cream, optional

Directions:

Beat eggs, sugar, milk, pumpkin, vanilla, salt, cinnamon, ginger, and nutmeg together. Pour into greased 9x13 inch glass dish. Sprinkle approximately 2 1/2 cups cake mix over top. Sliver butter thinly and place evenly on top. Sprinkle with chopped pecans. Bake at 300 degrees F for 1 - 1 1/2 hours. Serve with whipped cream.
