- Simply potatoes (Southwestern style, if you want a bit of spice - available in the dairy section near the eggs)
- eggs (beat well with a little milk or water)
- shredded cheese
- soft taco shells
Take taco shells out of fridge and bring to room temperature. Fry potatoes according to directions. Turn heat down to medium. Pour in eggs and scramble with the potatoes. Add some salsa and shredded cheese to taste. Spoon into middle of taco shells, fold sides in a little and gently roll like a burrito.
