Mackerel Pate (Microwave)

Ingredients

  • 1 finely chopped onion
  • 4 Tbsp. butter
  • 1 1/2 cups cream cheese
  • 2 1/2 Tbsp. lemon juice
  • 2 1/2 Tbsp. fresh parsley chopped
  • 3/4 lb. smoked mackerel fillets
  • 1 1/4 tsp. French mustard
  • freshly ground black pepper to taste
  • 4 Tbsp. soured cream
  • 2 1/2 tsp. tomato paste
Garnish:
  • Lemon wedges
  • Fresh parsley and cucumber slices

Directions

Put the onion into a soup bowl. Cover with plastic wrap and pierce. Microwave on Full power for one minute. Set aside. Flake the fish into the processor or blender goblet, discarding the skin and bones. Add the onion. Place the butter in the bowl used for the onion and microwave on Power 4, or simmer for 2 minutes. Add to the blender or processor with all the remaining ingredients. Process or blend until smooth. Pour into a sprayed loaf pan; smooth the surface. Chill until firm. Turn out onto a serving dish and garnish with wedges of lemon, crimped cucumber slices and parsley.

This is usually eaten with salty crackers, or raw vegetables.
