Banana Oatmeal Cookies

Ingredients:

  • 2/3 cup shortening
  • 1 cup sugar
  • 2 eggs, well beaten
  • 3/4 cup mashed bananas
  • 1 tsp. vanilla
  • 2 cup flour
  • 3/4 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup chopped nuts
  • 1 1/2 cups quick oatmeal

Directions:

Mix ingredients in order given. Drop by teaspoonful on greased baking sheet. Bake at 375 degrees F for 10-15 minutes. 4 dozen cookies.

We would eat these for breakfast. LOL He won't eat oatmeal, but he'll eat the cookies. Go figure.

Banana Oatmeal Cookies

This makes great, soft cookies!

Ingredients:

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1/2 cup margarine
  • 1 egg, unbeaten
  • 1 cup mashed bananas
  • 1 3/4 cups quick oatmeal
  • 1/2 cup nuts (optional - I leave out)

Directions:

Mix dry ingredients, and cut in margarine. Add remaining ingredients, and beat well. Drop by teaspoon onto greased cookie sheet. Bake at 350 degrees F for 12 minutes.

Servings: 3 dozen cookies
Prep Time: 15 Minutes
Cooking Time: 12 Minutes

  • 3/4 cup margarine or butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 cup ripe bananas, mashed (about 3)
  • 2 cups quick cooking oats, uncooked
  • 1-1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 cup milk chocolate chips, butterscotch chips or raisins

Directions

Preheat oven to 350 degrees F. In a large bowl with an electric mixer, beat margarine and sugar until fluffy. Beat in egg and mashed bananas.

Combine dry ingredients in a separate bowl. Add and blend dry ingredients into the mixing bowl with the wet ingredients. Fold in chocolate chips, butterscotch chips or raisins.

Drop by teaspoonfuls onto greased baking sheets and bake for approximately 8 minutes.

Ingredients

  • 3/4 cup oatmeal
  • 3/4 cup sugar
  • 2 bananas
  • 1 1/2 cup flour
  • 1 tsp. cinnamon
  • 1/2 cup chopped walnuts
  • 3/4 cups shortening
  • 1 tsp. baking soda
  • 1 egg beaten
  • 1/2 tsp. salt
  • 1 tsp. nutmeg

Directions

Spread the oatmeal on a cookie sheet and brown in moderate oven on 350 degrees F. Cream the shortening and sugar until light and fluffy. Stir together the flour, baking soda, salt, and spices. Add dry mixture to creamed mixture stirring until completely mixed. Add nuts and cooled oatmeal. Blend thoroughly. Drop by tsp. on greased cookie sheet. Bake at 350 degrees F for 15 minutes. Will make 4 dozen.
