I am expecting guests for dinner within the next five hours; my helper just finished boiling the red potatoes and I'm spastic that they will turn dark! Help! Advice needed! Thanks!

Smell from Hard Boiled Eggs

After I hard boil eggs in water to which a little vinegar has been added, I soak them in ice cold water, and when no longer warm, place in fridge in a bowl. Hours later the fridge smells like sulphur.
Any suggestions?

Mom's Dumpling Recipe

Ingredients

  • 1 egg
  • 3/4 cup milk
  • 2 cups flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. butter (melted)

Directions

Beat egg in bowl. Add milk and mix. Add sifted dry ingredients and mix thoroughly; add melted butter. Drop by teaspoons in hot broth. Boil around 15 minutes.

Stuffed Manicotti

Ingredients

  • 1 lb. sausage
  • 2 cans tomato sauce
  • 1 can tomato paste
  • 1/4 cup water
  • 1/2 Tbsp. brown sugar
  • 1 carton ricotta cheese
  • 1 egg
  • Parsley flakes
  • 12 manicotti noodles (cooked)

Directions

Brown sausage; drain. Remove 1/2 of sausage and set aside. Stir tomato paste, sauce, water and brown sugar in sausage; simmer 15 minutes. Combine; set aside sausage with ricotta and 2 cup mozzarella, egg and parsley. In a 9x13 inch pan, pour 1/3 spaghetti sauce mixture. Stuff noodles with ricotta cheese mixture and place on top of sauce. Pour remaining sauce over filed noodles. Top with remaining cheese. Bake at 350 degrees, uncovered, for 20 minutes.

Quiche Lorraine with Bacon

Ingredients

  • 1 1/2 cups milk
  • 4 eggs (slightly beaten)
  • 1/2 tsp. salt
  • 2 cups Swiss cheese (shredded)
  • Dash of cayenne
  • 2 Tbsp. flour
  • 1/2 lb. bacon (crisply cooked, crumbled)
  • 1 unbaked pastry shell

Directions

Heat oven to 350 degrees. Combine milk, eggs and seasonings; mix well. Toss cheese with flour; add cheese mixture and bacon to egg mixture. Pour into pastry shell. Bake at 350 degrees for 40-45 minutes. Makes 6 servings.

Crispy Baked Chicken

Ingredients

  • 3 Tbsp. margarine of butter
  • 1 1/2 cup Betty Crocker Potato Buds mashed potatoes (dry)
  • 1/4 cup Parmesan cheese (grated)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 1/2 - 3 lb. broiler fryer chicken (pieces)
  • 1 egg (beaten)

Directions

Heat oven to 425 degrees. Heat margarine in 9x13 inch rectangular pan in oven until melted. Mix potatoes, cheese, salt and pepper. Dip chicken into egg; roll in potato mixture. Place skin side up in pan. Bake, uncovered 50 minutes or until thickest pieces are done and coating is crisp. Makes 6 servings.

Impossible Chicken and Broccoli Pie

Ingredients

  • 1 cup mushrooms (sliced)
  • 1 pkg. frozen broccoli
  • 3 cups Cheddar cheese (shredded)
  • 1 1/2 cup cooked chicken (cut up)
  • 2/3 cup onion (chopped)
  • 1 1/2 cup milk
  • 3 eggs
  • 3/4 cup Bisquick baking mix
  • 3/4 tsp. salt
  • 1/4 tsp. pepper

Directions

Grease a 10 inch pie plate. Rinse broccoli to thaw; drain broccoli. Mix broccoli, 2 cup cheese, chicken and onion on plate. Beat milk, eggs, baking mix, salt and pepper, 15 seconds in blender or 1 minute with hand beater. Pour mixture on plate. Bake until knife in center comes out clean 35 minutes at 400 degrees. Remove from oven. Top with remaining cheese and put back in oven for 2 minutes. Cool 5 minutes. Serves 6-8

Steak Diane

Ingredients

  • 2 6 oz Filet Mignon
  • 1/8 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • 2 Tbsp. butter
  • 1 tsp. Dijon-style mustard
  • 2 Tbsp. shallots,minced
  • 1 Tbsp. lemon juice
  • 1 1/2 tsp. Worcestershire sauce
  • 1 Tbsp. fresh chives
  • 1 tsp. brandy
  • 1 Tbsp. fresh parsley

Directions

Season both sides of steak with salt and pepper. Melt 2 tbsp butter in a heavy skillet, add mustard and shallots. Saute over medium heat 1 minute. Add steaks and cook approximately 3 minutes on each side for med-rare. Remove steaks to serving plate and keep warm. Add into pan drippings,1 Tbsp. butter, lemon juice, Worcestershire sauce and chives. Cook for 2 min. Add brandy, pour sauce over steaks. Sprinkle parsley over the top. Serves 2. Enjoy this with a baked potato and or a salad and vegetable and garlic bread.

Sopapillas

Ingredients

  • 4 cups oil for frying
  • 2 cups unbleached all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon shortening
  • 1/2 cup water
  • 1 teaspoon ground cinnamon
  • 1/4 cup white sugar

Directions

Heat oil in deep fryer to 375.

In large bowl, sift together flour,baking powder and salt. Cut in 2 tablespoons shortening until mixture resembles coarse crumbs.

Gradually stir in water just until dough pulls together. Divide dough into 4 pieces and form each piece into a ball. Roll balls into 8 inch diameter circles. Cut each one into 8 wedges. In a large bowl, mix together cinnamon and sugar, set aside.

Fry wedges until they puff up and turn a light brown. Drain briefly, roll in the cinnamon and sugar and serve. They are good with a little honey or chocolate sauce to dip in. I like to top mine with a can of whip cream.

Ham Balls

Ham Balls

Ingredients:

  • 1 lb. ground ham
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 2 eggs
  • 2 graham crackers
  • 1 1/2 cups milk

Directions:

Mix all together well. Form into balls, either large or small, as desired. These freeze well. Sauce for ham balls is as follows:

Sauce:

  • 1 can tomato soup
  • 1 cup brown sugar
  • 1/4 cup vinegar
  • 1 Tbsp. dry mustard

Directions:

Mix well. Pour over balls and bake in 350 degree oven for 45 minutes.

Ham Balls II

Ingredients:

  • 1 1/2 lbs. ground ham
  • 1 lb. ground pork sausage
  • 1 cup cracker crumbs
  • 2 eggs
  • 1 cup milk
  • 1 cup brown sugar
  • 1/2 cup water
  • 1/2 cup vinegar
  • 1/2 tsp. dry mustard

Ingredients:

Mix the first 5 ingredients well and form into balls. Brown the ham balls in a skillet. Arrange the balls in a baking pan. Put the other ingredients in a shaker jar and shake well. Baste each ham ball with the mixture. Bake at 325 degrees for 1 1/2 hours. Baste each 1/2 hour. These can also be made quite small and served as an appetizer.

Ham Balls III

Ingredients

  • 2 1/2 lbs. ground ham
  • 1 lb. ground pork
  • 1 1/2 lb. ground beef
  • 3 cups graham cracker crumbs
  • 2 cups milk
  • 3 eggs

Sauce:

  • 2 cups brown sugar
  • 2 cups tomato soup
  • 1/2 cup white vinegar
  • 2 tsp. dry mustard

Directions

Mix above ingredients; using a 1/2 cup measuring cup, make balls. Makes 25. Heat sauce ingredients and pour over ham balls. Bake at 350 degrees for 1 hour.

Pineapple Pie Pudding Trifle

Make a pineapple pie filling with pineapple juice from a can of pineapple chunks:

Ingredients

  • 1/2 cup sugar
  • 5 tablespoons corn starch
  • 2 egg yolks
  • 1 cup of pineapple juice
  • 2 tsp. butter
  • Vanilla wafers and Ginger Snaps
  • Pineapple chunks

Directions

Pie Filling

Mix together the sugar, cornstarch; add juice slowly to the dry ingredients, whisking until almost thick; take out about 1/2 cup of mixture and slowly add to egg yolks (tempering technique); add back to pie filling mixture; whisk until thicken; remove from heat and add butter whisking until filling is shiny. Place in a bowl, cover with wax paper directly on top of filling; refrigerate.

To assemble:

Use vanilla wafers and ginger snaps alternately.

Place a small amount of pie filling in bottom of trifle bowl; make a ring of gingersnaps, put some pineapple chunks, pie filling, vanilla wafers, pie filling, pineapple chunks.

Alternate the gingersnaps, vanilla wafers; layer up until pie filling is used. Top with whipped cream and sprinkle finely chopped gingersnaps and vanilla wafers on top.
