Lime Cilantro Hummus

You can substitute the lime juice with the milder flavored lemon juice or even a half and half mixture of the two if you prefer.

Ingredients:

  • 1 (15 oz) can garbanzo beans, drained (reserving 1 Tbsp. liquid) and rinsed
  • 1/3 cup loosely packed fresh cilantro leaves
  • 1 garlic clove, peeled
  • 1 Tbsp. lime juice
  • 1 Tbsp. extra virgin olive oil
  • 3/4 tsp. Worcestershire sauce
  • 1/4 tsp. water
  • Salt and pepper to taste, if desired

Directions:

Place all ingredients, including the 1 Tbsp. of reserved garbanzo bean liquid, in a blender or food processor and pulse/blend until the mixture is smooth.

A truly yummy recipe. I do a similar version but omit the Worcestershire, bump up the garlic and add some cayenne.
