Thanks for all the great recipes! I have a request for a beef enchilada recipe which includes ground beef, salsa, enchilada sauce, flour tortillas and cream cheese among the ingredients. Any help would be appreciated.

Overnight Lettuce Salad

Ingredients

  • 1 head lettuce, cut up
  • 1/2 cup chopped celery
  • 1 cup chopped green pepper
  • 1 onion, sliced
  • 1 package frozen green peas, unthawed
  • 1 cup mayonnaise
  • 2 Tbsp. sugar
  • grated Cheddar cheese
  • 8 slices bacon, fried crisp and crumbled

Directions

Layer first five ingredients in pan. Spread with mayonnaise. Sprinkle with sugar, then cheese and bacon. Cover with foil. Refrigerate overnight.

Cheddar Tater Tot Casserole

Ingredients

  • 1 1/2 lb. hamburger
  • onion, to taste, opt.
  • salt and pepper, to taste
  • 2 cans Cheddar cheese soup, undiluted
  • 1 can corn, peas or green beans
  • 1 bag Tater Tot potatoes

Directions

Put raw hamburger in 9x13 inch pan. Season with salt, pepper and onion. Drain veggies and spread on top of hamburger. Spoon soup over the veggies. Top with Tater Tots. Bake for 1 hour at 350 degrees F.

Blueberry Delight

First layer:

  • 1 package graham crackers, crushed
  • 1/2 cup melted butter
  • 1/4 cup sugar

Mix. Put into a 9x9 inch pan.

Second layer:

  • 1 package Dream Whip, prepared as directed
  • 1 cup powdered sugar
  • 1 package cream cheese

Whip together and spread on crackers.

Third layer:

  • 1 can blueberry pie filling

Spread on top of second layer. Chill overnight.

Lemon Cream Pie

You'll need 1 9-inch baked pie shell.

Lemon Filling:

Ingredients

  • 1 1/4 cups sugar
  • 6 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 2 cups milk
  • 3 egg yolks, slightly beaten
  • 1/2 cup lemon juice
  • 1 Tbsp. grated lemon rind
  • 2 Tbsp. butter

Directions

Cook sugar, cornstarch, salt, and milk in double boiler until thick. Add small amount of mixture to egg yolks. Combine with the rest of the mixture and cook a few minutes. Remove from the heat. Add lemon juice, rind and butter. Cool. Pour into shell.

Meringue:

Ingredients

  • 3 egg whites
  • 1 Tbsp. lemon juice
  • 1/8 tsp. cream of tartar
  • 6 Tbsp. sugar

Directions

Beat eggs, lemon juice, and tartar until soft peaks form. Gradually beat in sugar until stiff peaks form. Spread over filling, sealing it clear to the edge. swirl and make peaks. Brown 15-20 minutes in 375 degrees F oven. Watch often after first 10-12 minutes.

Corned Beef Brisket

Ingredients

  • 1 corned beef brisket, with seasoning packet
  • 1/4 cup honey
  • 2 tsp. mustard
  • 6 potatoes
  • carrots
  • cabbage wedges

Directions

Put brisket and seasoning packet in Dutch oven; Cover with water. Simmer 2 1/2 hours or until done. Remove brisket and place on a broiler pan, leaving liquid in Dutch oven. Combine honey and mustard. Brush half of it on brisket, leaving rest for later. Resume cooking liquid in Dutch oven, adding potatoes, carrots and other veggies to suit family size. Cook 15 minutes while keeping brisket in the oven on low to let it glaze. Add cabbage to liquid and pour rest of glaze over cabbage. When done, put brisket with veggies on platter.

Carrot Cake

Ingredients

  • 3 eggs
  • 3 cups sugar
  • 1 cup vegetable oil
  • 1 1/4 cup crushed pineapple and juice
  • 3 cups grated carrots
  • 2 cups flour
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 2 tsp. salt
  • 1 cup chopped walnuts (opt.)
  • 1 cup coconut flakes (opt.)

Directions

Mix eggs, sugar, and oil 2 minutes at medium speed. Add pineapple and carrots. Mix in flour, cinnamon, soda, salt, then add walnuts and coconut. Mix well at low speed. Bake 30-35 minutes at 350 degrees F. fills a 9x13 cake pan. Frost with cream cheese frosting.

Cream Cheese Frosting:

Ingredients

  • 1/2 cup margarine
  • 1 package cream cheese
  • 1/3 cup shortening
  • 2 lb. powdered sugar
  • 2 Tbsp. water or enough liquid to make right consistency.

Directions

All ingredients should be at room temperature. Combine in order given. Liquid required will depend on room temperature and humidity. Makes enough to frost a sheet cake or 8 inch round cake.

Yummy, Easy Meatloaf!

Ingredients

  • 1 1/2 lb. hamburger
  • 3/4 cup quick oatmeal, uncooked
  • 1/4 cup chopped onion
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg, beaten
  • 3/4 cup milk

Sauce

  • 1/3 cup ketchup
  • 2 Tbsp. brown sugar
  • 1/2 tsp. prepared mustard or 1/2 tsp. dry mustard

Directions

Combine meatloaf ingredients, mix thoroughly, pack firmly into a 9x9 inch pan. Combine sauce ingredients and pour over meatloaf. Bake 1 hour at 350 degrees F. Let stand 5 minutes before serving.
