Chicken Salad I

Ingredients:

  • 1 small chicken
  • 1/2 cup mayonnaise
  • 1 cup orange juice
  • 1 cup water
  • 1 tsp. nutmeg
  • 1/2 cup diced celery
  • 1/4 cup onion
  • 1/4 cup diced pickles (sweet gerkins)

Directions

Cook chicken in water, orange juice and nutmeg in a large pan. Simmer until chicken is very tender. Cool and refrigerate. Later remove bones. Cut meat into bite-size pieces. Add mayonnaise, celery and onions. Serve on lettuce leaf and sprinkle with paprika.

Chicken Salad II

Ingredients:

  • 2 1/2 cups Chicken-cubed
  • 1cup celery, sliced thin
  • 1 cup halved grapes
  • 2 Tbsp. parsley
  • 1/2 cup mayonnaise
  • 1 Tbsp. lemon juice
  • 1 Tbsp. vinegar
  • 1 1/2 tsp. mustard
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

Mix all ingredients well and chill at least 1 hour before serving. Great on croissants! A party favorite!

Chicken Salad III

Ingredients:

  • 4 cup cooked chicken (cubed)
  • 1 cup carrots (grated)
  • 1 cup celery (chopped)
  • 1 cup sliced ripe olives (opt.)
  • 1 cup green seedless grapes
  • 1 cup mandarine oranges (drained)
  • 1 Tbsp. onion (grated)
  • 1 cup salad dressing (low-fat)
  • 1 cup frozen whipped topping
  • 2 cans shoestring chips or Chinese noodles

Directions

Combine all but chips or noodles. Chill 2 hours. Add chipes before serving on lettuce leaf.

Chicken Salad IV

As requested by several members.

Boil 3 boneless chicken breast in 2 cans of chicken broth, don't add any water. Cook until done. Remove from broth (save broth for soup, etc.). Shred or chop chicken

Mix together:

  • 1/3 - 1/2 cup mayo
  • 1/4 cup sweet pickle relish
  • 1 small can sliced olives
  • 1 small onion, chopped
  • Salt and black pepper to your taste
Add chicken and mix together. Refrigerate for several hours to let flavors blend

This is my one and only, and favorite sister's basic recipe. :) You can add or subtract whatever ingredients you want. This is the way I like it.

I don't like chicken (I only eat it fried, bad for me I know) or turkey for that matter. I (really) don't like boiled chicken but I will eat this. It's the best I've tasted in my 64 years. She makes it for us about once a week. It's simple and basic, I do hope you enjoy it.
