Chicken Salad

Ingredients:

  • 2 1/2 cups diced chicken
  • 1 cup white grapes, opt.
  • 1/2 cup almonds
  • 2 Tbsp. parsley
  • 1 cup celery
  • 1 tsp. salt plus 1 tsp. pepper
  • 1 envelope unflavored gelatin
  • 1/2 cup cream, whipped
  • 1 cup mayonnaise
  • 1/4 cup cold water
  • 1/2 cup chicken broth

Directions:

Put gelatin in cold water. Dissolve over hot water. Add chicken broth and mix all of ingredients together and chill. Serves 12-15.

Chicken Salad

Love this on lettuce or in a sandwich.

Ingredients:

  • 5 cups cooked, diced chicken
  • 2 Tbsp. salad oil
  • 2 Tbsp. orange juice
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • 1 cup cooked rice
  • 1 1/2 cups green grapes
  • 1 1/2 cups diced celery
  • 1 cup pineapple tidbits, drained
  • 1 cup slivered almonds
  • 1 1/2 cups Miracle Whip
  • 1 cup chopped lettuce

Directions:

Mix first 5 ingredients. Let stand while preparing remaining ingredients. Combine and serve on lettuce or mix with chopped lettuce.

Servings: 6-10
Prep Time: 15 Minutes
Cooking Time: 0 Minutes

Chicken Salad

This is a favorite of mine. Nice because it is good as a salad or in a sandwich. I prefer mine not in the sandwich but just plain.

Ingredients:

  • 4 cups chopped cooked chicken (use canned, if desired)
  • 1 cup green grapes, cut into halves
  • 1 cup chopped apple
  • 1/4 cup chopped pecans
  • fat-free mayonnaise

Directions:

Combine chicken, grapes, apple, and pecans in medium bowl, and mix well. Stir in just enough mayonnaise to moisten.

Servings: 6-8
Prep Time: 5 Minutes
Cooking Time: 0 (I use canned chicken) Minutes

Ingredients:

  • 1 small chicken
  • 1/2 cup mayonnaise
  • 1 cup orange juice
  • 1 cup water
  • 1 tsp. nutmeg
  • 1/2 cup diced celery
  • 1/4 cup onion
  • 1/4 cup diced pickles (sweet gerkins)

Directions

Cook chicken in water, orange juice and nutmeg in a large pan. Simmer until chicken is very tender. Cool and refrigerate. Later remove bones. Cut meat into bite-size pieces. Add mayonnaise, celery and onions. Serve on lettuce leaf and sprinkle with paprika.

Ingredients:

  • 2 1/2 cups Chicken-cubed
  • 1cup celery, sliced thin
  • 1 cup halved grapes
  • 2 Tbsp. parsley
  • 1/2 cup mayonnaise
  • 1 Tbsp. lemon juice
  • 1 Tbsp. vinegar
  • 1 1/2 tsp. mustard
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

Mix all ingredients well and chill at least 1 hour before serving. Great on croissants! A party favorite!

Combine all but chips or noodles. Chill 2 hours. Add chips before serving on lettuce leaf.


Boil 3 boneless chicken breast in 2 cans of chicken broth, don't add any water. Cook until done.


Marinate chicken in oil, orange juice, vinegar, and salt. Cool cooked rice. Mix all ingredients together and chill.


I opened a can of chicken and began to add apple and one thing led to another, and now I am addicted to my new chicken salad recipe!


Mix everything together except shoestring potatoes. Add them just before serving. Serve on crisp lettuce leaf.


Yummy for tortilla wrap sammies.
