Tangy Zucchini Saute

This is a quick side dish for zucchini lovers.

Ingredients:

  • 4 medium zucchini, halved lengthwise and sliced
  • 1 medium onion, chopped
  • 2 Tbsp. olive oil
  • 2 minced garlic cloves
  • Ad
  • 1 tsp. of Italian seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 - 2 Tbsp. white balsamic vinegar

Directions:

In a large skillet, saute zucchini and onion in oil until tender, about 10 minutes. Stir in the garlic, Italian seasoning, salt and pepper; saute 1 minute longer. Add vinegar and saute for 1-2 minutes or until liquid is evaporated and zucchini is evenly coated. Happy tasting.
