Easy Cheeseburger Bake for 2

Ingredients

  • 1/4 pound ground beef
  • 1/4 cup chopped onion
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup bisquick mix
  • 1/4 tsp. salt
  • 1/2 cup milk
  • 2 egg whites

Directions

Heat oven to 400 degrees F. Spray 8x4 inch loaf pan with cooking spray. Cook ground beef and onion until brown, drain. Spread in pan, sprinkle with cheese. In small bowl, stir remaining ingredients pour into pan over beef. Bake about 20 minutes or until knife inserted into center comes out clean.

A Berry Fruitie Smoothie

Ingredients

  • 2 cups vanilla ice cream, softened
  • 1 cup strawberries
  • 3/4 cup blueberries
  • 1/2 cup raspberries
  • 2 Tbsp. sugar
  • 1/2 cup cranberry juice
  • 1 Tbsp. lemon juice

Directions

Place all ingredients in blender. Add ice to make 4 1/2 cups level. Process until smoooth.

Crab Stuffed Peppers

Ingredients

  • 2 lbs. Snow Crab Leg Clusters
  • 1 stick butter
  • 1 teaspoon Worcestershire sauce
  • 1 onion (finely diced)
  • 3 stalks celery (finely diced)
  • 1 sleeve Ritz crackers, crushed
  • 1 cup seasoned bread crumbs
  • 1/4 to 1/2 cup milk
  • 3 large green bell peppers

Directions

Steam and pick out Snow Crab. From 2 lbs. of Clusters, you should have about 8 oz. of crabmeat. (It usually fills an 8 oz size cool whip tub!) Set aside.

Preheat oven to 350 degrees F. In a large frying pan, melt the butter and stir in the Worcestershire sauce.. Let simmer together for a minute or so. Add the onion and the celery, and cook until the onion is translucent. Stir in the crabmeat.

Crush one sleeve of Ritz crackers into the pan. Add the bread crumbs. Mix well. Add just enough milk, so that the stuff all sticks together (it will kind of make a ball). Set aside.

Halve the peppers, removing the seeds and the membrane. Put in a shallow pan, with just enough water to cover them. Bring to a boil, and cook for 5-10 minutes. Remove peppers from the water, and drain well.

Spray a 9x13 inch baking dish with cooking spray. Place peppers in the dish. Put 1/6 of the stuffing mixture in each pepper half. Cover the pan with aluminum foil, and bake at 350 degrees F for about 45 minutes.

Serves 6

NOTES: *one of the southern supermarket chains has snow crab leg clusters on sale about once a month. I wait until they are on sale for $3.99 or $4.99 per pound. That's about half the price that they usually go for.

Crescent Roll Ham and Cheese Snacks

Ingredients

  • crescent rolls
  • ham slices
  • cheese slices
  • spicy mustard

Directions

Take two triangles from the crescent rolls and pinch them together (twice), spread spicy mustard on both. Layer a ham slice and a cheese slice. Place the other crescent roll over that. Bake in the oven at 350 degrees F degrees until crescent rolls are brown. When they come out while still hot, cut them through the triangles to make small sandwiches.

Raisin Custard Pie

Ingredients

  • 1/2 cup sugar
  • 3 Tbsp. cornstarch
  • 3 egg yolks
  • 2 cups milk
  • 1/2 cup raisins
  • 2 tsp. lemon juice
  • 1 pastry shell, baked

Meringue:

  • 3 egg whites
  • 1/4 cup sugar

Directions

In a medium saucepan, combine sugar and cornstarch. Whisk in the egg yolks, and milk unitl thoroughly combined. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil for 1 minute. Remove from heat. Add raisins and lemon juice. Pour into pie shell. For meringue, beat egg whites in a small bowl until foamy. Gradually add sugar, 1 tablespoon at a time, beating until stiff and glossy. Spread over pie, making sure meringue covers all of the filling. Bake at 350 degrees F for 10-15 minutes, or until light golden brown. Serve warm or cold. Store leftovers in refrigerator. 8 servings.

Zucchini Pie

Ingredients

  • 3 cups zucchini (peeled and thinly sliced)
  • 2-3 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 1/4 cups sugar
  • 4 Tbsp. flour

Directions

Toss lemon juice and zucchini together. Mix dry ingredients, then add to zucchini. Dot with butter. Put into unbaked pie shells. Cover with top crust. Bake at 450 degrees F for 40-60 minutes or test with a toothpick to see if zucchini is done.

Coffee Cookies

Ingredients

  • 2 cups brown sugar
  • 1 cup shortening
  • 2 eggs
  • 1 cup cold coffee
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 4 cups flour
  • 1 tsp. vanilla

Directions

Bake at 350 degrees F for 10-12 minutes. Let cool and frost.

Frosting: Heat to a boil 1/4 cup milk and 1 Tbsp. margarine or butter. Remove from heat and stir in 1 lb. powdered sugar, 2 Tbsp. peanut butter and 1 tsp. vanilla.

If frosting starts to set up while you are frosting the cookies, add just a touch of milk until you get the consistency again. The frosting is what really makes these cookies. And don't forget to have one with that next cup of coffee or big glass of milk. Betcha can't eat just one!
