Eggs with a tomato base.
Ingredients:
- 3 Tbsp. olive or sunflower oil
- 1 medium onion, sliced
- 3 green chillies, chopped
- 5 medium tomatoes, chopped
- 1/4 tsp tumeric powder
- 1/2 tsp garam masala
- add salt to your taste
- 4 large eggs
- 3 sprigs of curry leave
- 3 sprigs of coriander leaves*
*This is commonly referred to as cilantro in the US.
Directions:
Add oil to your pan. When heated, add the onion till lightly brown. Add the green chillies and after a minute add the spices and stir not to burn the spices.
Add the tomatoes and let it cook for few minutes whilst stiring you can add a little water if necessary.
Crack the eggs one at a time, keeping the yolks intact cooking in low heat.
When cooked, sprinkle curry leaves and coriander leaves. Serve with rice or bread. Thanks!
