Susan St. James Recipes

Many years ago when Phil Donohue was still on tv, he had Susan St. James on his show. She made some recipes that I used to make and my family loved, but I cannot for the life of me remember all the ingredients or how to put them all together.

The first one was a recipe for a barley casserole that had barley, fresh veggies, some kind of cheese (I think Swiss or Mozzarella) and liquid of some sort, and it was baked.

The second one had noodles, onions, tomato soup,corn, and some kind of meat (either chicken or ground beef) and it was baked also.

If you know these recipes, please post them! I would love to make these again.

Hershey Bar Cupcakes

OK - I'm letting out a secret family recipe that kids and adults love, Hershey Bar Cupcakes

Make yellow cupcakes from a mix (or make your own), divide up one package of Hershey Bars (the multi pack - I think there are 6 full size bars in a pack.) between the amount of cupcakes you made.

When the cupcakes come out of the oven, IMMEDIATELY top with Hershey bars and put back in the oven to melt (turn the oven off first). Now, they can be eaten gooey, as is, or put in fridge for a crunchy top. WE love these!

No Fail Cheesecake

Ingredients:

  • 3 - 3 oz. cream cheese, softened
  • 2 eggs
  • 1 cup sugar, divided
  • 1 1/2 tsp. vanilla, divided
  • juice of 1/2 lemon (about 1 Tbsp.)
  • 1 pint sour cream
  • 9 inch graham cracker crust

Directions:

Preheat oven to 350 degrees F. Bake crust for 5 minutes. Beat cream cheese, eggs, 1/2 cup sugar, 1 tsp. vanilla and lemon juice until well combined. Pour into shell and bake for 20 minutes.

Mix sour cream, 1/2 cup sugar, 1/2 tsp. vanilla until combined. Carefully spoon on top of hot filling and bake for 5 minutes. Cool and refrigerate for at least 5 hours.

This is good plain, or with a fruit glaze.

Crispy Chicken And Parmesan Vegetables

Ingredients

  • 1 pound new red potatoes, halved
  • 4 chicken leg quarters, skin removed
  • 1 pkg Shake-n-Bake
  • 2 cups (1 1/2 inch) red pepper strips
  • 1/4 cup ranch dressing
  • 1/4 cup parmesan cheese

Directions

Preheat oven to 375 degrees F. Place potatoes in large microwavable dish. Cover with vented plastic wrap, microwave on high for 7 minutes. Coat chicken with seasoning. Place in half of foil lined 9x13 inch pan. Add peppers, dressing and parmesan cheese to potatoes, toss to coat. Place in pan next to chicken and bake 40 minutes or until chicken is cooked through and potatoes are tender.

Biscuit Topped Tomato Beef Bake

Ingredients

  • 1 pound ground beef
  • 1 can (10 3/4 oz.) tomato soup
  • 1 egg
  • 3/4 cup milk
  • 1 cup chopped onions
  • 1 cup mozzarella cheese
  • 1/2 cup chopped green onions
  • 1 1/2 cup all purpose baking mix

Directions

Preheat oven to 400 degrees F. Brown meat, drain and return to pan. Add onions. Cook and stir for about 5 minutes. Add in soup. Cook 3 more minutes. Spoon into 2 qt baking dish.

Beat egg and milk together. Add cheese and green onions, add baking mix. Stir just until moistened.

Drop by spoonfuls over meat mixture. Bake 35 minutes or until topping is golden.

BBQ Brisket

Ingredients

  • 6 lbs. beef brisket
  • 1 (18 oz) bottle of smoke flavored BBQ sauce
  • 2 Tbsp, brown sugar
  • 1 tsp. garlic powder
  • 2 tsp. black pepper
  • 1/2 tsp. onion powder
  • 1/2 tsp. dry mustard
  • 2 tsp. Worcestershire sauce

Directions

Combine all ingredients except brisket,then place brisket into crockpot liner. Turn brisket around a few times. Let sit for about 3 hours, not plugged in. Plug in once marinaded, cook on low 9 to 10 hrs.

You can do the marinating the night before and leave in fridge. The following morning, place liner in and cook.

Warm Chili Cheese Dip

Ingredients

  • 1 pkg (8 oz) cream cheese, softened
  • 1 small can chili, no beans
  • 2 cups shredded cheddar cheese
  • Corn, tortilla or other chips

Directions

Spread cream cheese in bottom of 8x8 inch pan. Add chili on top then shredded cheese. Bake at 350 degrees F. until cheese melts. Serve with your favorite chips.

Oven Rice And Egg Meal

If your family is into rice as much as mine, try this.

Add 1/2 cup pre-cooked rice (Jasmine or Basmati work best) to a muffin pan sprayed with non-stick cooking spray. The large muffin pans work best. On top of the rice, add onion, bell pepper or whatever veggies you have on hand. Over this, break one egg and puncture the yolk. Add 2 Tbsp. water over the top. Bake in toaster oven or conventional oven at 350 degrees F. for 12 minutes. When it's done, place over a toasted English Muffin. It makes a GREAT to-go meal, or just eaten at home. You can add margarine or cheese, or use your imagination.

Rich Strawberry Shortcake

Ingredients

  • 2 cups flour
  • 2 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup butter
  • 1 egg, beaten
  • 1/3 cup light cream

Directions

Sift dry ingredients. Cut in butter until mixture is like coarse crumbs. Combine egg and cream; add all at once to dry ingredients. Stir to moisten. Spread in greased pie pan. Sprinkle sugar over top. Bake at 375 degrees F. for 20-25 minutes or until golden brown. Serve with strawberries and milk.

Buttermilk Waffles

These are light as a feather.

Ingredients

  • 1 1/4 cups buttermilk
  • 3 eggs, separated
  • 1 1/2 cups flour
  • 1/2 tsp. baking soda
  • 1 Tbsp. sugar or Splenda
  • 2 Tbsp. canola oil

Directions

Separate the egg yolks from the whites and place in separate bowls. Beat the egg whites until stiff. Mix other ingredients in the order listed. Fold in egg whites. If the batter seems a little too thick, thin with a little more buttermilk, or a little water. The following directions are for the Belgian Waffle Maker, which is what I use. Heat your waffle iron until the light goes out. Spray the grids with a little nonstick spray before you start baking. You do not have to spray for each waffle, just before the first one. Pour a scant half cup of batter in the waffle iron, and cook until golden brown.

Spam Spread Hors d'oeuvre Balls

Ingredients:

  • Spam spread
  • 1 tsp. dry onion soup mix
  • 3 oz. Cream cheese

Directions:

Mix above ingredients, roll into tiny balls and chill. Then spear on toothpicks, frost with chopped nuts, parsley, paprika or Parmesan cheese. Chill to serve.
