Raisin Pecan Muffins
- 1 3/4 cups flour
- 1/4 cup sugar
- 1 Tbsp. baking powder
- 3/4 tsp. salt
- 1/3 cup margarine
- 1/2 cup raisins
- 1/2 cup chopped pecans
- 3/4 cup milk
- 1 egg beaten
Mix dry ingredients. Cut in margarine until mixture resembles coarse crumbs. Mix in raisins and pecans. Mix beaten eggs with milk and add all at once to the dry ingredients. Stir just until blended.
Fill 12 greased muffin cups 3/4 full. Bake 400 degrees F for 15-20 minutes or until muffins test done with a toothpick.
