Ingredients
To make Homemade glaze for strawberry pie:
In a saucepan, combine:
1 cup sugar
2 tablespoons corn starch
1 cup water
Cook over low heat until thick and clear. Remove from heat and add 2 tablespoons of powdered strawberry jello. Add red food coloring if desired for a brighter color. Let cool. Wash and dry 1 quart of strawberries and add to the cool filling. Put in a BAKED pie shell and refrigerate. This is so much better than storebought glaze!
Put Bisquick and butter in pie pan. Add boiling water and stir. Pat evenly in pan. Bake at 450 degrees F for 8 minutes. Simmer 1 cup berries with 1 cup water until berries start to bread up (about 3 minutes). Blend sugar and cornstarch and stir into boiling mixture, must be thick. Add red food coloring. Set aside to cool. Put remaining berries in baked and cooled short pie. Pour glaze over berries. Refrigerate until firm, about 2 hours. Top with whipped cream. Note: Watch closely as short pie burns easily.
Crush 1/2 berries, reserving enough whole ones medium size, to cover bottom of crust, standing up. Mix cream cheese, sugar and lemon juice with a little milk to bring to spreading consistency and spread on bottom of crust. Then stand strawberries in bottom. Bring crushed berries, 1/2 cup sugar, corn starch and jello to a slow boil until thickened. Pour crushed mix over all and chill. Serve with whipped cream.
