Crockpot Raisin Bread Pudding

If you like Raisin Bread Pudding and want a simple easy way to make great bread pudding you have to try this.

Ingredients:

  • 12 slices of Sunmaid Raisin Bread with Cinnamon Swirl, lightly toasted and cut into cubes
  • 2 1/2 cups milk, scalded, cooled slightly
  • 2 eggs beaten
  • 3/4 cup sugar
  • 1/4 tsp. cinnamon
  • Dash Nutmeg (Optional)
  • Dash salt
  • 1 tsp. vanilla extract
  • 2 Tbsp. melted butter

Directions:

Lightly butter the crock pot then add toasted bread cubes,

In bowl whisk together the scalded milk, eggs, sugar, cinnamon, nutmeg, salt, vanilla and melted butter. Pour mixture over the bread cubes.

Gently using a large spoon or spatula, press bread cubes down into mixture so all bread pieces will soak up milk mixture. Do not stir.

Cover and cook on low setting for 5 to 6 hours until bread pudding is set.

Serve with dessert sauce or whipped cream.

Servings: 8
Time:About 15 to 18 minutes Minutes Preparation Time
5 to 6 Hours Cooking Time

Source: This is a recipe I found on About.com but I altered the bread from the French Bread they called for to the Sunmaid Raisen Bread with Cinnamon Swirl.

No one but me likes bread pudding. So when I fix french toast for son and grandson, I use leftover egg and add a little more milk and vanilla and cinnamon and one slice of good whole wheat bread, and some brown sugar, about
1 Tablespoon. I also might add walnuts or flax seed. I put in fridge for an hour to make sure bread is really soaked. When I'm ready to cook I add raisins or berries, whatever's around, and cook in microwave for 5 minutes on 50 percent power. I chill and have with tea in afternoon. This is a very high fiber snack.
