Tex-Mex Melts

Ingredients

  • 1 large tomato, chopped
  • 1 small onion, chopped
  • 2 Tbsp. chopped fresh cilantro
  • 1 Tbsp. finely chopped seeded jalapeno pepper (I leave this out)
  • 1 Tbsp. lime juice
  • 1/4 cup shredded Mexican style cheese
  • 36 Triscuit crackers (roasted garlic is my favorite)

Directions

Combine tomato, onion, cilantro, pepper and lime juice; cover. Refrigerate at least 1 hour to allow flavors to blend. Place 6 crackers on microwaveable plate. Top each with 2 tsp. of the tomato mixture; sprinkle with 1 tsp. cheese. Microwave on high 15 seconds or until cheese begins to melt. Repeat with remaining topped crackers. Makes 18 servings, 2 topped crackers each.
