Ingredients:

  • 1 deep-dish pie crust (9inch)
  • 1 cup grated Swiss cheese
  • 1 can cleaned and de-veined small shrimp
  • 1 can mushroom stems and pieces, drained
  • 1/2 cup broccoli cuts, thawed, drained
  • 2 Tbsp. chopped green onions
  • 3 eggs, lightly beaten
  • 1 can half and half
  • 1/2 tsp. salt
  • 1/2 tsp. grated lemon zest
  • 1/4 tsp. dry mustard
  • dash allspice
  • 1/4 cup sliced almonds, toasted

Directions:

Prepare pie shell or use premade one. Sprinkle cheese over bottom of pie shell. Add shrimp, mushrooms, broccoli and green onion. Combine eggs, half and half, salt, lemon zest, mustard and allspice. Pour over shrimp. Top with almonds. Bake at 375 for 45-60 minutes or until a knife inserted in the middle comes out clean.

    I could never find a quiche recipe that I liked until I found this recipe in a magazine. I like this because it is simple and tastes great as well.

    Fry or broil bacon and arrange over crust with grated cheese. Beat eggs with flour, salt, cayenne and nutmeg. Add milk and melted butter.

Recipe: Quiche

I could never find a quiche recipe that I liked until I found this recipe in a magazine. I like this because it is simple and tastes great as well.

Ingredients:

  • 3/4 cup milk
  • 3 eggs
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 9 inch frozen pie shell (I just use boughten)

Directions:

Combine all ingredients and pour into frozen pie shell. Brush 1 Tbsp. egg mixture over crust. Add whatever you like, such as grated cheese, mushrooms, peppers, ham, bacon, etc. Bake for 30 to 33 minutes in 400 degree F oven until knife inserted comes out clean.

I save the tinfoil pans from the little frozen chicken pies and make individual quiches when I'm in a cooking mood. I bake them and freeze them and just pop them in the microwave for a quick and easy lunch. A box of pie crust mix, 2 1/2 cups milk, 10 eggs, 3/4 tsp. salt and 3/4 tsp. pepper will make 15.

  • 1/2 lb. Swiss cheese, grated
  • 4 eggs
  • 1 tsp. sifted flour
  • salt
  • cayenne
  • nutmeg
  • 2 cup milk
  • 1 tsp. melted butter

Directions

Fry or broil bacon and arrange over crust with grated cheese. Beat eggs with flour, salt, cayenne and nutmeg. Add milk and melted butter. Pour custard over meat and cheese. Bake at 375 degrees F for 40 minutes or until set.
