Heat olive oil on low heat with a clove of garlic cracked open.
Place one to two slices of smoked fresh mozzarella on bread along with one to two slices on tomato.
Place one basil leaf on top of the tomato and put a slice of bread on top.
Brush the infused olive oil on both pieces of bread.
Put sandwich in a large pan on medium heat.
Place a heavy cast iron pan on top of the sandwich to squish it down.
Cook until bread is lightly browned and cheese is melted.
You can use these sandwiches as a soup dipper or can be dipped in marinara.
