Making Almond Roca

When I make almond roca the sugar and butter mixture sometimes separates. The result is a greasy, not as hard or as tasty, product. Even when I make it on dry days this will happen. What am I doing wrong?

Substitute for Tomatoes

I have found out that I am allergic to tomatoes and I would like to know if anyone has any suggestions for something I could substitute them with. I like to eat lasagna, pizza and nachos but am no longer able to eat them with tomatoes.

Wheat Bread With Flax Seed

Ingredients

  • 7 1/2 cups water
  • 4 1/2 Tbsp. yeast
  • 1 1/4 cup sugar
  • 1 1/4 cup vegetable oil
  • 3 Tbsp. salt
  • 6 Tbsp. flax seed
  • 6 cups wheat flour
  • additional white flour

Directions

Combine first 6 ingredients and mix well. Add 2 cups wheat flour, mix well and add rest of wheat flour and enough white flour to make a nice soft dough that doesn't stick to your hands. Punch down 3 times at 30 minute intervals. The fourth time, take dough and shape into loaves. Bake at 350 degrees F for 30 minutes. Yield: 8 loaves.

Apple Pie A La Mode Tea

Ingredients

  • Cinnamon Apple or Apple tea
  • French Vanilla Coffeemate powder
  • 2 packets Splenda or Sweet n Low
  • Reddi Whip

Directions

Prepare tea as usual (with tea bag and boiling water), add Coffeemate and sweetene. Top with Reddi Whip.

Barbecue Chicken Sauce

Ingredients

  • 2 cup vinegar
  • 2 cup water
  • 1/2 cup butter
  • 5 Tbsp. Worcestershire sauce
  • 1 Tbsp. black pepper
  • 1/2 cup salt
  • 1 Tbsp. garlic powder

Directions

Bring to a boil and put chicken pieces into sauce. Cook at a rolling boil for 5 minutes, then drain and put on hot grill until both sides are golden brown. Put in roaster and pour sauce over all. Finish in oven until soft and ready to eat. You can dip chicken into sauce a few times while grilling, also.

Black Bottom Cupcakes

Filling

Ingredients

  • 1 8-oz. package Cream cheese, softened
  • 1/3 cup sugar
  • 1/8 tsp. salt
  • 1 lg. egg, beaten
  • 1 cup chocolate chips

Directions

Cream all ingredients but chips together; stir in chips.

Cupcakes

Ingredients

  • 1-1/2 cup flour
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup vegetable oil
  • 1 Tbsp. White vinegar
  • 1 tsp. vanilla extract

Directions

Preheat oven to 350 degrees F. Line muffin tins with paper liners. Sift together dry ingredients; add wet ingredients and 1 cup water. Spoon cupcake batter into liners, filling them about three-fourths full. Drop a small dollop of filling on top of each cupcake. Bake for 20 minutes.

Becky's Magic Mushrooms

Though I am not a real mushroom fan, I have heard that this recipe is a really fantastic one. I plan on serving it at our Christmas Eve supper.

Ingredients

  • 4 lg Portabella mushrooms, cubed
  • 1 lg red onions
  • 4 tsp. chopped garlic
  • 2 sticks real butter
  • 2 tsp. crushed red pepper
  • 1 Tbsp. olive oil
  • 1 tub sliced white mushrooms
  • 1 tsp. curry powder
  • 1 tsp. paprika
  • salt and pepper
  • 1 bottle good dry red wine

Directions

In a wok or large iron skillet, saute butter, olive oil, sliced onion and garlic. Add cubed portabella mushrooms. Add red pepper and wine. Reduce for 15 minutes, or so, stirring every few minutes. Add white mushrooms and curry powder and paprika, salt and pepper. Simmer 5 or 10 minutes and serve as a side dish.
