Today's Recipes


Meatball Hero Sandwiches

Ingredients

  • 2 pounds hamburger
  • 2 eggs
  • 1 cup italian seasoned bread crumbs
  • 2 jars (1 lb. 10 oz. each) ragu spaghetti sauce
  • 8 italian rolls (halved) about 6 inches long
  • 2 cups shredded mozzarella cheese

Directions

In medium bowl, mix hamburger,eggs,and bread crumbs. Shape into 24 meatballs in 6 qt saucepan, bring spaghetti sauce to a boil over medium heat. Gently stir in meatballs. Reduce heat to low and simmer uncovered, stirring occasionally for about 20 minutes or until meatballs are done. Serve meatballs and sauce in rolls, topped with cheese

You can cut this recipe in 1/2 if a smaller version is needed.

Cheese Quiche Squares

Ingredients

  • 6 eggs, beaten
  • 1 small can green chilies, chopped with juice
  • 1 lb. Monterey Jack cheese
  • 1 lb. sharp cheddar cheese

Directions

Beat eggs. Add diced chilies. Grate both cheeses and add to eggs. Pour into greased 9 x 13 inch pan. Bake in 375 degree F oven for 35 min. Cut into 2x2 inch squares. Serve at room temperature. Great appetizers, snacks.

Roasted Potatoes

Ingredients

  • 3 lbs. red new potatoes
  • 1 Tbsp. extra-virgin olive oil
  • 1/4 cup butter
  • 2 tsp. paprika
  • 1/4 cup parsley (chopped)
  • salt and pepper

Directions

Preheat oven 450 degrees F

Small potatoes (2inches or less) can be left whole, Cut the larger potatoes in half.

Place in a roasting pan or dutch oven.

Lightly coat with Olive oil.

Roast potatoes 20-25 minutes or until tender.

Melt Butter in a small pan with paprika.

Pour butter over the potatoes.

Sprinkle with parsley and salt and pepper.

Toss to coat all potatoes evenly.

Pea Salad

Ingredients

  • 1/2 cup uncooked salad pasta or macaroni
  • 1 lb. can of sweet (English) peas
  • 2 stalks celery
  • 1 small onion, chopped fine
  • 2 slices American or cheddar or any favorite cheese, cut in small cubes
  • Salt and pepper to taste
  • 1/4 cup Miracle Whip or mayonnaise

Directions

Cook pasta according to package directions. Cool.

Blend cooked pasta with above ingredients. Chill several hours. You can add cubes of ham or salami or cooked chicken for Main Dish. Or, as is, for side dish. So cool, light , creamy and easy.
