3 Bean Salad

This is one that my mom really likes. I'm honestly not real big on it because I don't care much for beans, unless they are baked or green! :) However, I do know many people do like this recipe and I hope you will, too.

Ingredients:

  • 1 can garbanzos, drained (15oz.)
  • 1 can pinto beans, drained (15oz.)
  • 1 can cut green beans (16oz.)
  • 1/2 cup sliced onion
  • 1/2 cup chopped green pepper
  • 3/4 cup sugar
  • 2/3 cup vinegar
  • 1/3 cup salad oil
  • 1 tsp. salt
  • 1 tsp. pepper

Directions:

Turn garbanzos and pinto beans into a colander and wash thoroughly. Then add well drained green beans. Combine beans with onions and green pepper. Combine remaining ingredients and bring just to a boil. When completely chilled, pour over vegetables and toss lightly. The longer this stands the better it tastes. Stir it up from the bottom of the bowl.
