Bob Evans Chicken Salad (Copycat)

This reminds me of Bob Evans chicken salad. It's as close as I can get it at home, but just as good. My husband says he likes mine better! It's a great light summer supper.

Ingredients:

  • 2 cups cooked chicken, chopped and shredded
  • 1 1/2 cups diced celery
  • 2-3 Tbsp. diced onion (I prefer sweet)
  • salt and pepper, to taste
  • mayonnaise (I prefer miracle whip, you could use whatever you like)
  • 1 cup halved red or white grapes
  • 1/4 cup chopped pecans
  • pimento or relish, to taste (Optional - I use these depending on my mood)
  • iceberg lettuce

Directions:

In a large bowl combine chicken, celery, onion, salt, and pepper. Add mayonnaise a tablespoon at a time, until just moistened or until desired consistency. Add pimento or relish if you wish. Gently fold in grapes.

Serve on lettuce-lined plates, topped with pecans. If you wish, you can serve with fruit (like they do at the restaurant) or with vegetables, such as carrot sticks, bell pepper slivers, etc., or with crackers on the side.
