Easy Skillet Supper

Ingredients:

  • 1 to 1-1/2 lbs. ground meat
  • 1 onion, chopped
  • 1-2 carrots, diced
  • 1 can stewed tomatoes (or diced tomatoes)
  • 1 can Rotel
  • Advertisement

  • 1 large can pinto or kidney beans (or cut corn)
  • 1/2 tsp. chili powder - optional
  • shredded cheese of your choice (for topping)

Directions:

Brown meat and onion together, drain grease if necessary. Add carrots, tomatoes, and Rotel. Simmer until carrots are tender. (about 15 minutes) Add beans. Heat thoroughly and serve with cornbread.

You can also enjoy this over cooked egg noodles or rice.

Servings: 6-8
Prep Time: 10- 15 Minutes
Cooking Time: 20-30 Minutes

I don't eat red meat could I or have you ever sub. ground turkey or ground chicken in this dish? I think I'll try it anyway. Looks like it would freeze well.

Opening cans is just great when you know how to put good things together. This is what our son would call "Cowboy Food", and is his favorite. Just plain old good cooking is my hubby's name for it.

Yes Luana M. Use ground turkey, It is just as good and some say better for you. DD uses it a lot. And Buddy likes it too.
