Paprika Chicken and Dumplings

Paprika Chicken
  • 1 onion, chopped
  • 1 1/2 Tbsp. shortening
  • 1 tsp. paprika
  • 1 tsp. pepper
  • 2 tsp. salt
  • 3-4 lbs. chicken, cut up
  • 1/2 cup water
  • 1/2 pt. sour cream
  • 1 cup flour
Dumplings:
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp. salt
  • 1 cup flour
Brown the onion in shortening and add the paprika pepper, salt and chicken. Brown the chicken for 10 minutes and add the water. Cover and simmer the chicken until it is tender and remove it from the heat. Mix together the sour cream, flour and the drippings from the pan and mix well. Pour mixture over the chicken.

For Dumplings: Mix the eggs, milk, salt and flour together to form a thick paste. Drop the batter into boiling salted water and cook about 10 minutes. Drain and rinse the dumplings and add to the chicken paprika.
