Spud and Onion Bake

I love how the potatoes absorb the flavor of the onions in this recipe.


  • 4 medium potatoes
  • 1/4 cup butter
  • 2 medium onions, sliced
  • Ad
  • salt and pepper to taste
  • 2 Tbsp. chopped parsley


Cut 4 squares of foil and place on baking sheet. Peel potatoes and cut into 4 crosswise slices. Spread each with butter. Reassemble potatoes and arrange onion slices between slices. Secure with toothpicks. Sprinkle with parsley, salt and pepper. Wrap each potato with foil. Arrange on baking sheet. Bake at 375 degrees F.
