Oat Waffles

Why make plain ol' white flour waffles when you can make healthier waffles from a whole grain like oatmeal?

Ingredients

  • 3/4 cup old fashioned oats
  • 3 Tbsp. butter or margarine
  • 1 1/4 cups flour
  • 1 Tbsp. sugar
  • 1 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup milk (I use 1 cup yogurt plus 1/8 cup milk)

Directions

Cook oats with 1 cup water. Turn off heat. Stir in butter or margarine till melted. In a separate container, sift flour, sugar, powder, soda, and salt. Combine eggs and milk (or yogurt & milk). Add cooled oatmeal. Mix with dry ingredients till blended. Cook waffles.

Rice Krispie Chicken

Ingredients

  • Rice Krispies
  • 1 stick margarine, melted
  • chicken pieces
  • salt, opt.
*Need foil-lined pan.

Directions

Put Rice Krispies on waxed paper or plate and crunch up a little. Dip chicken pieces in margarine and then Rice Krispies. Put on foil-lined pan. Salt, if you want. Bake at 350 degrees F for about 1 hour. You don't have to turn the chicken so you can go on with something else and not watch it closely.

Apple Dumplings with Different Pastry

Ingredients

Pastry:

  • 2/3 cup shortening
  • 2 cups flour
  • 1 tsp. salt
  • 3 Tbsp. powdered sugar
  • 4 Tbsp. ice water
Apple Filling:
  • 6 apples, pared and cored
  • sugar
  • butter
  • 3/4 tsp. cinnamon
  • nutmeg
Topping:
  • 1 cup sugar
  • 2 cups water
  • 3 Tbsp. butter
  • 1/4 tsp. cinnamon
  • 1 tsp. vanilla

Directions

For Pastry: Mix half of the shortening with dry ingredients. Then mix in other half and add ice water. Blend with fork until dough can be pressed together. Divide into 6 equal portions and roll out each separately. Each one should be about 1 7 inch square in order to encase the apple.

For Apple Filling: Place an apple on each pastry square. Fill cavities with sugar, butter, 1/8 tsp. cinnamon and a sprinkle of nutmeg. Add more butter and sugar at top. Moisten points of pastry and bring opposite corners up over apple, sealing well. Place about 2 inches apart in a buttered oblong casserole dish.

For Topping: Prepare syrup of sugar, water, butter, cinnamon and vanilla. Boil together for 3 minutes. Pour around, but not over dumplings. Bake at 425 degrees F for 40-45 minutes. If they seem to be browning too much, turn oven to 375 degrees F for the last 15 or 20 minutes.

Cinnamon Thumbs

Ingredients

  • 1 cup butter
  • 5 Tbsp. sugar
  • 1 tsp. vanilla
  • 2 cups flour, sifted
  • 2 tsp. cinnamon
  • 1/2 cup sugar

Directions

Cream together butter, sugar and vanilla. Blend in flour, using pastry blender. Pinch off pieces of dough and roll into large marble-sized balls. Press slightly with thumb to flatten. Bake on ungreased cookie sheet at 375 degrees F for about 12 minutes or until lightly brown. While cookies are still warm, roll them in cinnamon-sugar.

Pasta with Fresh Tomatoes, Basil and Mozzarella

Ingredients

  • 1 lb. fresh, ripe tomatoes
  • 4 cups fresh basil
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 lb. ziti or tube-shaped pasta, cooked al dente and drained
  • 1-1/2 cup grated part-skim mozzarella cheese

Directions

Plunge tomatoes into boiling water for 1-2 minutes to soften skins, then into ice water; peel and coarsely chop. Coarsely chop 3/4 of the basil leaves; reserve remaining whole leaves for garnish.

In a nonstick skillet, heat olive oil and add tomatoes. Bring to a boil. Reduce heat to simmer and add chopped basil, salt and pepper. While pasta is still warm, toss with sauce and mozzarella. Turn pasta over and over to mix ingredients and melt cheese. Garnish with remaining basil.

Serves/Makes 8

Oatmeal Bread

Oatmeal Bread

  • 2 cups boiling water
  • 1 cup oatmeal
Pour boiling water over oatmeal. When cool add:
  • 2 Tbsp. margarine
  • 3/4 cup. brown sugar
  • 1 tsp. salt
  • 3/4 cup. chopped nuts
  • 2 pkgs. yeast
Add flour to make a soft dough you can knead. Let rise in bowl. Grease loaf pans. Divide dough in half. Place in pan. Let rise again. Bake in 350 degree F oven about 45 minutes. Can add raisins, also.

Apricot Pineapple Orange Salad

Ingredients

  • 6 oz. package orange gelatin
  • 2 cups boiling water
  • (scant) 2 Tbsp. Knox gelatin, dissolved in 4 Tbsp. cold water
  • 1 can chunk pineapple
  • 1 can unpeeled apricots
  • 1 can mandarin oranges
  • 1 cup mini marshmallows
  • 1 cup Cool Whip
  • Shredded cheddar cheese (optional)

Mix gelatin and hot water; add 2 cups juice from fruit; cool. Add Knox gelatin. Add fruit, cut up in small pieces (Do not cut up oranges).

Place in a 9x13 inch pan or casserole.

After firm, cover with the following dressing:

Salad Dressing

Ingredients

  • 1/2 cup sugar
  • 1 Tbsp. butter
  • 1 Tbsp. flour
  • 1 egg
  • 1/2 tsp. salt
  • 1 cup pineapple and apricot juice

Instructions

Beat eggs. Add sugar, flour, salt, juice and butter. Cook, stirring constantly, until it thickens. Add 1 cup mini marshmallows, and beat until smooth; chill. Fold in 1 cup Cool Whip and spread on salad. Let stand several hours. You can sprinkle shredded cheddar cheese on top, if you like.

Ham And Scalloped Potato Dinner

Last night, I needed something fast for supper. In the fridge, had some leftover veggies and a package of ham slices. I took a 9 x 13 inch baking dish and sprayed it with nonstick cooking spray. I took 3 boxes of Betty Crocker scalloped potatoes (I'd gotten cheaply with coupons and a store sale). I placed 2 boxes of the dried potato slices in the baking dish, covering the bottom, tossing the drained veggies over the potatoes. Then I rinsed, drained and sliced the packaged ham slices and placed over the veggies. Then I placed the dried potatoes from the third box of BC scalloped potatoes over the ham.

While the oven was heating up, I mixed the required water, milk, cheese packets from the BC scalloped potato boxes, along with a bit of olive oil, mixed well and poured slowly into the baking dish, making sure to moisten all the potatoes before placing in the heated oven (as per package directions) for 25-45 minutes or until brown.

The scalloped potato mixes would have just been a side dish, but preparing it this way, it became a main course, with not much more work or time required.
