Yellow Crook-Necked Squash Patties
I love yellow squash! It's a lot more versatile than some people think.
- 3 cups grated yellow crookneck squash
- 1 green bell pepper, grated
- 1 small onion, grated
- 1 egg, slightly beaten
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup flour
- 2 Tbsp. oil
Combine squash, green pepper, onion, egg, salt, pepper, and flour in bowl; mix well. Drop by tablespoonfuls into hot oil in skillet. Cook until brown on both sides.
